🤗 Hey hi, my friends!  how are you today? I am very busy, and working weekends too so I am trying my best to continue giving you my homemade recipes with all the love you deserve.

As part of my craziness 😂 for cassava, here I am posting to you this easy, flavorful, satisfying, full of proteins, and amazing Apple Bread Pudding that it's to die for, you cannot think there is cassava flour on it, It's very refreshing for this season of the year, and Summer, of course, you will want to have it in your fridge. it's like a dense bread pudding with all the apple flavor on it! I don't know how this idea came out but it's worth every second I thought about it 😋

This "bread" pudding is kind of what my mother used to do, in my country we soak the pieces of bread in a mix of milk, sugar, vanilla, and salt until they are broken into tiny smaller pieces and are very soaked, then we add the eggs, dry or fresh fruits, and it is ready to bake, the result is like flan but denser. I know here is different but anyways I like most the way we have been used to doing it, and I will share it with you today.

I start to experiment to do it and calculate the quantities, I even knew how could it turn, as you can see I whisked first the egg whites and then I added the yolks to it, but I think it won't be necessary, only whisk the whole eggs together with the sugar until they are very frothy,  and after that follow the instructions.

Guys, let me tell you that this recipe is very good by itself but next time I will make my caramel recipe to put on the bottom as we always do, but it's ok to put it over if you like it, I like it as it is, my husband prefers to put my homemade chocolate syrup over it but for tastes, all the colors have been made.

While I am writing here, I am thinking, that we could do another recipe if you want to, instead of 3/4 cup of cassava flour, will be 1/2, and instead of 1/3 cup of milk will be 1/2 cup or more, and will be a pudding-like, not a bread pudding, what you think? do you like the idea or not? I say that because some of you prefer a simple pudding over bread pudding right? so it is up to you to change the ingredients and make another amazing recipe with this one.

Why did I put a whole lemon into the dough? I did that because I did not want my bread pudding to darken with the oxidation of the apples and because it gives a touch of freshness to it. Still, if you are lazy and don't want to blend the lemon, squeeze it and put it in the order I wrote in the description below,  on the other hand as you see there is nothing complicated to do it, it is easy to follow up, and staples ingredients that you have in your pantry waiting to be used: cassava flour, apples, cinnamon, sugar, and milk (any that you want to) and lemons.

Although this recipe is made with apples, I think it can be made with other fresh fruits, so grab anything you have on hand and start making it.

It's a pleasure for me to have made this easy recipe that is paleo,gut-health, gluten-free, dairy-free, and sugar-free, and it's a sustainable food as well to please my family, friends, and you without taking any expensive store-bought bread or one that was made by you at home without sacrificing the taste, and texture. The first time I tried it out it made me cry, have been a long time since I haven't eaten a bread pudding like this one.

Servings: around 10-12 persons


Ingredients:

  1. 4 medium sweet apples,3 skin off chopped in half-inch cubs, 1 sliced (I used honey crisp)
  2. 5 eggs at room temperature
  3. 1 tsp vanilla extract
  4. 1 large whole lemon skin off and white part too, seedless, chopped
  5. half of 1 lemon juice separated to put over the chopped apples
  6. 1/3 cup coconut, almond, cashew, or another milk you like (I used coconut)
  7. 1/2 cup ghee, coconut oil melted, or avocado oil (I used ghee)
  8. 3/4 cup  + 1 full tbsp cassava flour (I used Otto's)
  9. 1 tsp baking powder
  10. 1 tsp ground cinnamon separated in half 1/2 tsp for the dough,1/2 tsp for sprinkling over the pudding (adjust to your liking)
  11. 1 cup monk fruit sweetener or another sweetener or coconut, maple, date sugar, etc. (I used monk fruit sweetener to cut off the sugar)
  12. 1/2 tsp salt
  13. 1-2 tbsp coconut,  maple or date sugar, or another sweetener mixed with the cinnamon for sprinkling over the pudding (add more to your liking)


How to Make Cassava Apples Bread Pudding?


Preheat the oven to 350 F.

Grease and line the bottom of the 8x9 inches or 8x8 pan with parchment paper. Set it aside.

Pell, and take off the white part of the whole lemon with a knife, chop it, put it into the blender, and blend it until there is not any remaining piece aside. Well, I know, if you don't want to pass lots of steps, you can add all the lemon juice of 1 large lemon or 2 small juicy as well, it won't make a difference in the texture I think.

Skin off the 3 medium apples, chop them into small cubes around half of an inch and transfer all of them to a bowl,  the last apple is cut into a fine semicircle with the skin but you can take off the skin if you want to, take a juice of the remaining half of lemon and put it over, and stir well so they don't get brown, cover the bowl until it is used. Set aside.

In a medium bowl prepare the dry ingredients except, sugar, and salt, and stir them well.

Prepare the wet ingredients in a medium-large bowl, whisk the eggs with an electric mixer or by hand with the sugar, salt, and vanilla extract until they are very frothy, add the milk, and melted coconut oil, whisk again, and lastly add the lemon blended, stir.

Start adding the mixed flour in the third part, stir with a spatula until it's incorporated, and continue with the second part, then the last one until everything is well incorporated, fold the dough with the chopped apple cubes, and transfer it to the baking pan.

Smooth the surface of it with the spatula, and add the slices of the apple over, half lying down but a little upright with a separation between them, this is up to you, it's only for decoration.

Bake it for about 1- 1:15 hours or until a toothpick in the middle comes clean, and the center does not giggle anymore.

Take off to the oven, let it cool down in a pan, then transfer to the fridge until it's nicely cool.

It's really good like that but you can drizzle it over caramel, chocolate sauce over, ice cream, or anything you want to, or make a caramel sauce to put on the bottom like I did asy Coconut Flan.

Notes:

You can eat it warm, or at room temperature but wait until at least it feels a little warm or cool in a pan, around 1 hour, I transferred it to the fridge so I don't know if it will break apart, but if you cannot wait, and it works well, let me know in the comments below so everyone will know.
