Where are the cassava lovers over there?  Do you hear what I said? I made Yuca con Mojo Waffles, yes, please! I can`t stop eating them, indeed they are nothing fancy with basic ingredients everyone has in the kitchen but still, they are super delicious and easy to make! Have you ever eaten yuca con mojo before? if you haven`t tried it yet you don`t know what are you missing 😋  , believe me, you won't forget it anymore.

But if you know well how rich it is you will taste the same thing but it will be toasted outside with all the yummy chewy flavor inside, like a fried yuca 💓but without frying all the pieces before eating them, how does this sounds to you? ha, ha I catch you 😉

In my country, you can`t say "Yuca con Mojo" because the people start drooling 🤤 even if they ate it the day before. It`s exquisite, the combination of the sour orange with lots of fried minced o smashed garlic cloves and onions takes the cassava root to the next level. We also make almost all the bases the same way and..., the mojo criollo or Cuban mojo changes all of those humble roots into a perfectly soaked dish full of flavors.

So with all respect for those who know the recipe, I will write it again for those who do not know what I am talking about, deal?

The idea of making these waffles was not mine, was my daughter-in-law that tried it the other day in the square waffle maker, and it worked perfectly so the credit is to her. I rapidly took the idea and make it at home with leftovers I had the day before, it`s unbelievably easy to make also, you only have to buy the cassava frozen or fresh add orange, lemon, garlic, and onions and you are set to go, sometimes the easiest thing is the best, right?

The recipe is completely Vegan, Gluten-free, Paleo, Whole30, AIP, Dairy-free, Gut-health, and, also free from anything that tastes boring 😂

For those that are on the AIP diet, if you have an intolerance to the onion, leave it out, you can increase the garlic cloves by about 1-2 more besides that, coconut (better the one that does not taste like coconut) avocado, or virgin olive oils work perfectly for this recipe.

And for those that can´t eat eggs or don´t want to, do not have eggs at all. 
 
You can add baking powder if you like to give it more crunchy outside because it will react with the sour orange and lemon juices or you can leave it out if you don´t want to add anything, it won´t change too much. The main reason to do the waffles is the cassava has to cool in the fridge for at least 1 hour to absorb all the juices and the oil, and the waffles need to be cooked for more time than the regular waffle.

How can you make Cassava con Mojo or Yuca con Mojo? 

Boiling the cassava pieces with salty water for about 15-20 minutes until they are fork-tender, immediately drain them, remove the stick in the center, and mash them,  mixing lemon, and orange juices to make it sour orange, add garlic and onion chopped to the oil, fried them until the garlic is fragrant and onion starts to caramelize or you can use them in powder but it won´t be as rich than the another I explained earlier, stir it, taste it, but I warn you to be careful don´t eat all the bowl before making the waffles 😄 take the bowl with mashed cassava to the fridge for 1-2 hours, and after that, it will be fine to make the waffles, giving you another idea that also works, leave it rest, and mashed on the counter until it's at room temperature for about 2 or more hours then get ready to get your hands very dirty 😁 or you can do it with a large spoon but it won´t be the same, and you will finish with the spoon and the hands dirty anyways.

When I retook the idea from my daughter-in-law I was starting to experiment with mashed potatoes, taro root, malanga, ripe plantains, and sweet potatoes, and let me tell you all of them worked very well with their leftovers in no time from scratch!  are you excited as I do? Doing that you have a rapid breakfast, lunch, or dinner yup! I tried to make these waffles at night when I come back from work tired, and they are filling,  healthy and so easy to make, add a side of green salad, shrimp, ground meat, beef, eggs, you name it...

Ready to see how the process is? You will get 2 recipes in one, now you can make Cassava with Mojo or Waffles or better than that, both.  Let´s do it...

The recipes make 4 Servings

  1. 21/2 pounds of cassava chopped, fresh, or frozen
  2. 1 tbsp salt or more to taste
  3. 1/2 cup sour orange juice or 1/3 cup orange juice
  4.  1/4 cup lemon juice
  5. 1 medium onion sliced
  6. 5-6 large garlic cloves
  7. 1/3 cup avocado or coconut oil 
  8. freshly cracked black pepper, optional (AIP omit it)
  9. abundant water to cover the cassava pieces

In a large pot add abundant water, and a tablespoon of salt turn on the stovetop at high temperatures waiting for the water to boil. When it starts to boil, add the cassava pieces, if they are frozen don´t defrost them from the package right to the boiling water, turn down the stovetop to medium-high and let them boil for 15-20 minutes until the test of some with a fork they are easy to fall apart.

Drain them using a colander and remove the stick inside the middle of them. At this point, you can mash them or leave them in pieces, In my country, they are left in pieces but mashing them is so reasonable also.

Add the sour orange juice over them, stir well, cover the pot to keep it warm, and set aside while making the other part of the "Mojo".

Into a skillet at medium-low temperature add the oil, when it starts to sizzle add the sliced onion, a pinch of salt, and black pepper and stir well, let the slices start to caramelize then add the minced cloves of garlic, and let them until toasted and fragrant, be careful the minced garlic can be burn easily.

Put the hot oil with the onion slices and the toasted garlic on the cassava pieces or mashed cassava, and stir thoroughly.

Serve it hot as a side dish with meat, fish, eggs, pork rinds, or more vegetables.

Cooking Time: 12 min
Total Time: 15 min
Yields: 4 waffles

  1. 2 1/2 cups prepared mashed cassava with Mojo or another root or tuber (potato, sweet potato, etc.) cooled
  2. 1/2 tsp baking powder (optional)
  3. coconut or avocado oil to brush the waffler maker

How to make Cassava con Mojo Waffles?

Update 9/16/2022 Although this recipe is with cassava with mojo, you can use cassava cooked and mashed from the hours or the day before, add 3 to 4 tbsp of oil for this quantity, baking powder, also you could add onion and/or garlic powder, or confit, mix everything together to make a dough, and make the waffles.

Take the mashed cassava out to the fridge for about 20 minutes before you plan to make the waffles.

Stir it, if you want to add baking powder, sprinkle over it, and mix it.

Prepare your waffle maker greasing it, and turning it on at a hot temperature.

When it`s ready make a ball with your hands or a large spoon (the mashed cassava will be very sticky), and transfer it right to the middle of your waffle maker. If you have a Belgian waffle maker as you see in a picture, only add a larger ball of cassava inside it will spread out when is cooking.

Close the lid, and let it cook until is nicely toasted outside, and it does not get sticky to the waffler maker, do not despair, let it cooks and evaporate the liquid it has inside, and wait for the result that you have seen in the photos, yayyy!

Enjoy your preferred meat, egg, fish, cheese, or more vegetables for breakfast or any day meal!

Note: If you did not mash the cassava and had Yuca con Mojo left over, it`s better to mash them before transferring them into the fridge.

The number of waffles varies depending on the kind of waffle maker you have, if it is a Belgian waffler you will get only 2-3, the square ones are smaller so you will get 4-5.

To add vegan or dairy cheese to any waffle made with root vegetables you can do it in 2 ways  Add shredded cheese to the dough and mix thoroughly or put it inside the middle of the ball or on the upper part, and cook accordingly, it will sticky at first but then it becomes toasty.

Enjoy them as breakfast, lunch, dinner, or even plain!
