Perfect Paleo Bread Crumbs + Cuban Meatballs Recipe. 


I hope you are doing well! I know guys, there are a bunch of recipes for breading the meatballs, croquettes, fish, a large pulpety, etc. but believe me, I have been trying too to have the perfect one but sometimes the breading falls when you are turning them around, I did it with almond flour, tapioca, and almond flour, coconut, and almond flour, only with cassava, they are good, but as I told you, they tend to be separated from the meatballs or anything. I imagine that you have been through the same am I right?


Today I wanted to make meatballs, I love them!, but having headache did not like to pass too much time in the kitchen, you know the process is quite long, so I prepare the meatballs and have an idea if I can mix and add flours a little more, the issue is that I had to put the right amount in each one to have a perfect breading that does not fall and acts like the bread crumbs do.

Chemistry friends 😂 that I don`t like at all unless it`s for the food invention, my resulted mix was spectacular! I am so glad!! almond, coconut, and cassava flours work like a champion here, I think it`s the best of everything I have been tested so far and it is very close to the wheat crumbs we used to eat. The fried meatballs were perfect, the crust never separated from the balls, they cooked beautifully in the tomato sauce, what can I say, all was a success!!!!

Besides, there are a bunch of the recipes that add to the breading crumbs some spices, let me explain this better if you need to do this do it but do you barely season the meat? because if you prepare and season any meat correctly you wouldn't want to add anything else to the crunchy crust, hey guys, remember your grandma or your mom when they did that before were only eggs and bread crumbs, right? This is my experience doing it for a long time, so I recommend don`t do that if you don`t need to, leave that for when you don`t have time to marinate the meat so that the crust will enhance it with its own flavor.

This recipe yields perfectly for 1 pound of ground meat.

Additionally, I shorten the time of cooking the meatballs for the first time in my life, I used to cook them in a large pot with a lid on the stovetop, or into the oven, but the process to cook takes about 20-30 minutes, so now you can take advantage of that also, using my Pressure Cooker Crock Pot, sorry guys but  I don`t have Insta Pot but almost they all are similar, maybe the difference is 1-2 minutes, at least in this recipe.

I think this is the best way to do the meatballs my own opinion because they will impregnate with all the savors the sauce has instead of frying them and making the sauce separately, but do whatever makes you happy.

PERFECT PALEO BREAD CRUMBS

Ingredients:
  1. 2 1/2 tbsp cassava flour
  2. 5 tbsp coconut flour
  3. 4 tbsp almond flour
or
  1. 6 tbsp cassava flour
  2. 4 tbsp arrowroot flour
Egg mixture:
  1. 1 or 2 small eggs or 1 extra-large beaten with:
  2. a pinch of salt
  3. a splash of any nut or seed milk 
Instructions:

In a medium bowl measure and mix the 3 flours breaking any little ball that they can have with a fork. Let it aside.

In another bowl, whisk the egg with salt, then add the splash of milk and whisk again, set aside.

CUBAN MEATBALLS RECIPE IN INSTA POT:

Preparation Time, meatballs, and the tomato sauce: 30 min
Frying Time: 15 min
Cooking Time: 3 min
Total Time: 50 min 
The recipe yields 14 meatballs size approximately 1.5 inches 


Ingredients:
                                                                                                                                
  1. 1 pound ground beef tawed
  2. 1 large egg
  3. 1 tsp- 3/4 tbsp salt
  4. 1/2 tsp black pepper
  5. 1/2 tsp smoked paprika
  6. 1 tsp oregano
  7. 1 tsp Italian seasoning
  8. 1/2 tsp cumin
  9. 1/4 tsp cinnamon
  10. 1 tbsp drained capers or green olives minced
  11. 3 tbsp chopped red pepper
  12. 1/4 cup chopped onion
  13. 5 minced garlic cloves
  14. 3 tbsp fresh parsley or cilantro or combine both
  15. 3 tbsp coconut flour, or 2 tbsp of cassava flour
  16. 1 1/2 cups coconut or avocado oil for frying them (approximately)
Tomato Sauce:
  1. 18 oz marinara tomato sauce (approximately, it does not make a difference)
  2. 3 tbsp coconut or avocado oil
  3. 1/2 medium onion sliced
  4. 3 minced garlic cloves
  5. 1/2 red bell pepper sliced
  6. 1/2 tsp oregano
  7. 1/2 tsp rosemary
  8. 2 bay leaves
  9. 1/4 tsp chili powder (optional, add more to your liking)
  10. 1/4 tsp red pepper flakes (optional), add more to your liking)
  11. 1/4 cup white or red wine (optional)
  12. 1/4-1/2 tsp salt to taste
  13. 1/4 tsp black pepper
  14. About 4-5 oz of hot broth water to liquefy the sauce
  15. Chopped chives for decoration
  16. a lemon juice
Instructions:

In a large bowl throw the ground meat.

Beat the egg with salt, black pepper, and smoked paprika, pour into the meat follow with all the reserved ingredients.

For best results dig your fingers in there and mix it until everything is well incorporated.

Add the coconut flour and mix thoroughly.

Let it rest for about 10-15 minutes in the fridge, during the day or overnight, to the flavors meld together, and the coconut flour absorbs the humidity inside, but if you are in a hurry skip this step.

Mix again from the bottom to the upper part, then make the balls the size that you like, I did 14 balls about 1.5 inches.

On the counter put in order the balls, the beaten egg, the mixed flours, and a new plate to put them breaded.

Proceed to pass each one for the egg, then for the Perfect Paleo Bread Crumbs, and pass each to a plate.

Prepare a pot with abundant coconut oil between medium and medium-high, when it`s hot fry them turning around in batches, don`t overcrowd them, transfer them to an absorbent kitchen paper. Set them aside while you are making the tomato sauce.

Tomato Sauce:

Add the oil into the pot, push the saute button, when it`s hot, add the sliced onion with a pinch of salt, the bay leaves, and black pepper until they are translucid, add the minced garlic until fragrant.

Then add the tomato sauce marinate and the spices, change to a simmer button, let it simmer for about 2 minutes to impregnate the flavors, add the wine whisk, and then taste it, this is the moment to know if something is missing, add to your liking, then add the hot broth or water, and change to the pressure cooker for 4 minutes.

So we have the sauce boiling, let`s accommodate de balls inside the pot, over the sliced red pepper, close the lid, and set the pressure cooker for the 3 minutes when it rings turn off and release the valve. I taste them with a cooking thermometer and they were above 145 F. 

Take the pot out of the pressure cooker, if not they will continue cooking.

Garnish with chopped parsley and chives, and the lemon juice, serve with spaghetti, mashed potatoes or sweet potatoes, riced cauliflower, greens, salad, etc

Notes: 

Whole30 persons, assure you have good quality tomato sauce or make it by yourself.

For keto eaters, take out the cassava flour and mix 1/4 cup coconut flour with 3/4 cup almond flour.

This recipe can be made with any ground meat.
