🤗Hey friends, sending a big hug from the distance!  Marta over here, and yes I am still alive 😄 despite all.  It has been a while time since I don't post anything, and believe me, I am so sorry for that but last year I was sick with pain in my neck, and sciatica that sent me to chiropractic 3 times a week for more than a month, headaches along the way since that,  then my DHHS work agency just moved out, and the days were like a hell, you know how can be lots of things to put inside boxes and then lots of things to take off of them and put in the right place without stopping working and serving clients, and... my daughter, her husband, and my granddaughter got the Covid in October, I thought I have to go there to help them out, days of desperation but they could pass it in lesser time of the reglementary, was I still alive at that time? well, at least I tried to, but after that, I got another job position around my government agency in September 2021, and I learned a lot although it was stressed, it does not end there, I had to continue learning for 6 weeks via Webex, and after that in the field to complete 6 months, and then on December just moved out to San Antonio, TX near to my daughter and granddaughter, we are so happy but two weeks ago we got Covid, do you tell me what's going on with me? 😅 I really don't have an idea but now the stars seem to be aligned, and now I am feeling well again, looking for jobs, and in love with my apartment so I am here writing you, even if you thought that I forgot you that will never happen. 

So guys, let's take life easy step by step, always be kind, give your best to your family, co-workers, and everybody that surrounds you, and never forget the smallest things, they are in the majority of cases the most important, hugs, kisses, and smiles are free, don't be shy, spread the love, everyday wake up grateful to be o this world, and try to see the cup medium-full instead of empty, one day you are here, and another day won't be any more so be the best version of yourself sparkling the light even if you don't feel that way because others can be in worst conditions than you are right now.

Let's go to bake, I remember I wrote on Instagram when I made this recipe that it should be available in a few days and that never happened, my apologies guys, I just never knew what was coming for me? 😕 

Ok then, you should know that my Moist Cassava Orange Cake recipe is one of the most seen and shared ones everywhere here and in other countries, actually, it's so easy, moist, and flavorful that you'll never know it's made with cassava flour, and raw whole oranges, I have been made several times so I wondered to make a chocolate marbling to pair with, first I tried to separate a part of the batter to add the cacao/cocoa powder but I didn't know if it turned dry, then I remembered the chocolate mug cake that Otto's have in his blog and Boom!!! it worked like I thought! the marbling did not stay in the middle of the bread or cake but in the bottom and the surface, the combination made the cake superrrr... rich, it's mostly the same ingredients that I used before with the addition of the chocolate cake, I lesser the yogurt, and added date sugar instead of monk fruit sweetener but be free to use any kind of sweetener you want to.

This is an update for the recipes based on what I have learned working with cassava flour, having the eggs, and the flour at room temperature will improve any recipe. 

After I did this recipe I wanted to make my own chocolate cake before I move out here, so days before when I wasn't working anymore I started to experiment and I make a perfectly moist chocolate cake that will be the next recipe I will post so don't go anywhere and stay tuned for it.

See? you do not need to have special ingredients to have an outstanding, and flavorful cake that it's a pure sustainable food for everybody, additionally to have a healthy gut, refined sugar-free, gluten-free, and paleo, you can make it for any celebration with or without any frosting.

CASSAVA ORANGE CAKE WITH CHOCOLATE MARBLING (Paleo, Grain-Free, Gluten-Free, Refined Sugar-Free, Gut-Health)

The recipe makes around 10 slices             
                                                                                           





Ingredients Cassava Orange Cake:
  1. 1 cup cassava flour 
  2. 2 smallest sweeter whole oranges or 1 bigger
  3. 3 large eggs
  4. 1 cup monk fruit or another sweetener or lesser if you want it less sweet)
  5. 1/2 tsp pink or sea salt
  6. 1 tsp baking powder
  7. 1/2 tsp baking soda
  8. 1/4  cup coconut yogurt Greek-style or your preferred one
  9. 1 tsp vanilla extract
  10. 1/2 cup avocado, coconut oil, or ghee melted

  1. 3 tbsp cassava flour
  2. 3 tbsp coconut, maple, or date sugar
  3. 3 tbsp water
  4. 1 tbsp avocado, coconut, or ghee melted
  5. 1/8 vanilla extract
  6. 1/2 tsp apple cider vinegar
  7. 1 full tbsp cocoa/cacao/carob powder
  8. pinch of salt

How to Make the Best Cassava Flour Chocolate Cake?

Preheat the oven to 350 F.

Grease, and line the bottom of the 8-inches pan with parchment paper or an 8x5 inches pan, overlapping the sides to easily lift it.  Set it aside.

In a small bowl mix the cassava flour, baking powder, and soda just to combine.

Wash thoroughly the two oranges, if they are not organic, place them in a pot with water and baking powder for about 1 hour, then wash them and dry them with a towel. Cut the two ends of them carefully on a cutting board just to remove the hard part, don`t lose any juice, and chop them taking the seeds out.

In the food processor or blender place the chopped orange, and blend until smooth.

Add eggs, yogurt, oil, sugar, salt, and vanilla extract, and blend them together.

Prepare the Chocolate Mug Cake:

In a small bowl or a cup stir together the dry ingredients, in another bowl whisk the wet ingredients together, put them over the dry and mix until well combined, and no lumps remaining, set aside.

In the food processor throw the mixed cassava flour into the orange mixture, pulse until well combined, and don`t over-blend it. Let it rest for 5 minutes or so or you can mix it with a spatula, and pour it into the baking pan. 

Take the chocolate cake, and with a large spoon drop circles into different parts of the orange cake, then with a knife make a marble on it.

Bake it between 45- 55 minutes or until a toothpick in the center comes clean, and it springs back a little bit.

If you see it`s turning brown before its cooked, I usually use parchment paper over the pan make holes in it or make a tent or use aluminum foil (I don`t recommend using it because it transfers metal toxins to the food, lesser when the food or dessert has acid in it)

When it`s done, wait for about an hour or so to cool it down, pass a knife for the edges, put it on the plate, and enjoy it!

Note: Although this recipe can be made in a tin pan (8x5 inches) as you see here, I recommend doing it in an 8 inches spring pan because the moisture of it will delay the cooking process.

I will keep fresh on the counter inside an airtight container (when it's completely cool) for about 4-5 days) then transfer it to a fridge for some more days about 2 or 3, and let it rest on the counter for 15-20 min before enjoying all the savor on it.

I haven't frozen it so I don't know how will it be.
