I hope you are having a good day so far!  Here I am with bread again, ha, ha, I think I am eating more bread now than I could imagine. I have never made wheat bread ever, but now I have been discovering my love for paleo, gluten-free, and sometimes keto loaves of bread, they fall very well in the stomach, of course, if you don´t have any allergy to the nuts and seeds, are very tasteful, packed with protein, healthy fats, satisfy, and are easy to do indeed.

I bought a bunch of raw cashews to make some recipes that I was curious about and started to search for something that called my attention, I found one on Elana's Pantry website that she had modified from another blogger, this is what I want, I thought, but I would like to modify it to my liking, and this the way my yummy bread came out!

So here I am adding two different but healthy and nutrient-rich foods: cashew nuts and sesame seeds, they provide us a good amount of vitamins, minerals, antioxidants, carbohydrates, dietary fiber, calories, saturated, monounsaturated, and polyunsaturated fats, protein, plus the combination of both taste amazing! and based on 10 slices, you have into each one 8 g of protein, 0 g of sugar, 8 g of carbs, and 17.5 g of fat, really?

If you don´t have cashew butter, as I hadn´t, you can turn the raw cashews into butter, these are the steps you have to do:
  • Soak the cashews in filtered water between 4-6 hours, or leave them overnight.
  • Drain and clean them well with abundant water.
  • Put them on a dry cloth and scrub a bit with the towel. 
  • Transfer them to the food processor and blend until you have a homogeneous cream.
  • Finally, measure the amount you need into the cup. I think that very little is lost when you ground them, compared to other nuts, you need to measure more or less 1 full cup of raw cashews before you soaked them, to achieve about 3/4 cup of this recipe.

PROTEIN FILLED CASHEW BREAD (Paleo, Keto, Gluten-Free, Sugar-Free)

Baking Time 45 min
Total Time: 50 min
The recipe makes 10-12 slices

Ingredients:

  1. 3/4 cup of cashew butter
  2. 1/4 cup of tahini
  3. 2 tablespoons of psyllium husk
  4. 2 tablespoons of nutritional yeast
  5. 1/2 + a dash of Himalayan salt or sea salt
  6. 1 tablespoon of coconut vinegar or apple cider vinegar
  7. 3/4 teaspoon of baking soda
  8. 5 organic large eggs
  9. 1 teaspoon of ground onion (optional)
  10. 1/2 teaspoon of ground garlic (optional)
  11. 2 tablespoons of coconut oil, ghee, or butter separated
  12. 1 teaspoon of Sesame seeds for decoration (optional)

Instructions:

  • Preheat the oven to 350 F and grease a bread pan 9X5 inches with one tablespoon of oil or ghee set aside.
  • Throw the eggs, cashew, and tahini butter into a food processor. Blend them until smooth.
  • Add the psyllium husk, nutritional yeast, ground onion and garlic, and vinegar, and pulse again to incorporate all.
  • In the last step, add the baking soda and salt, and blend for a few seconds.
  • Pour the dough into a pan and bake between 40-50 minutes or until a toothpick in the center comes clean.
  • When the bread is out of the oven, if you like it, brush the surface with the other tablespoon of ghee, coconut oil, or butter, then sprinkle some sesame seeds on.
  • Allow it cool for about 1 hour before slicing it.
  • Enjoy as a breakfast, brunch, snack, sandwich, or even as part of a meal!
Note: You can keep it in the fridge in an airtight container or Ziploc bag, for up to 10 days.
The slices can be toasted on the grill easily.
