Taro root is my favorite among the tubers and roots, so you can figure out I have been talking and developing recipes with it for a while and I plan to do more, not only for the taste but the beneficial ingredients it has for us, including the plantain and their flour.

I saw several recipes of taro bread, but what I don´t like in those recipes is they have a large amount of flour in the dough, so I decided to cut that quantity of flour, to decrease the carbs content, and see how would the bread come out?  you know what? it tastes amazing, it¨s a little dense but holds together perfectly, you can leave it on the counter covered up for 2-3 days and then store it in the fridge if there is any piece left.


Do not throw away or be scared of the very mature plantain, it¨s not rotten, is extremely sweet at this point, and has begun to ferment, a thing that is very good for our gut also can be used for frying or making desserts.

Besides, this bread is a good replacement for others that can harm us, filled with oxidized oils, or trans fats, gluten, and preserves, this is a good gluten-free, nut-free, and sugar-free alternative, with proteins, healthy fats, carbs, fiber, vitamins, minerals, and resistant starch, all of the ingredients used for it are healthy and organic, also it has a pleasant savor of garlic, and you can use it with any main dish, soups, fried eggs, butter or any pesto you like, or as a sandwich, it does not break apart, and these slices can be toast in a grill very well as you can see in the picture below.

TARO ROOT-PLANTAIN BREAD (Paleo, Gluten-Free, Nut-Free, Sugar-Free)

The recipe serves 9 slices of bread.
Time to preparation: 10 min
Time to Bake: 60 min
Total Time: 1:10 min




Ingredients:                                                                                     
  1. 1 cup of tapioca flour sifted and measured again
  2. 1/4 cup plantain flour
  3. 1 medium taro root peeled and chopped                       
  4. 1 very mature plantain chopped
  5. 4 large garlic cloves minced
  6. 1/2 medium onion chopped
  7. 2 tablespoons of psyllium husk
  8. 1 1/2 teaspoon of salt
  9. 1/4 teaspoon of black pepper (optional)
  10. 1 teaspoon of baking powder
  11. 1 tablespoon of apple cider vinegar o lemon juice
  12. 4 eggs
  13. 1/2 cup of virgin olive oil, coconut oil, ghee, or avocado oil
  14. 1-2 tbsp parsley leaves chopped o torn with hands

Preheat oven to 350 F.

Grease the bread pan of 9"x 5", set aside.

Peel and chop the taro root and plantain.

In a food processor throw the chopped taro root, plantain, garlic, onion, eggs, oil, salt, black pepper, and parsley leaves, blend them, scraping the sides, until well combined. 
                                                                                      
Add the baking powder, apple cider vinegar, tapioca, and plantain flour, blend until smooth.

Pour the dough into the bread pan.

Bake it between 50-60 minutes, depending on your oven until a toothpick comes clean.

The bread will puff up, then it will deflate a little.

Let cool it between 20-30 minutes before slicing it.

Enjoy it!

Note: You can use any oil as I described above, however, I think this bread it´s better with olive oil or ghee because they add a nice taste to it.
