Hey, my lovely and preferred people! how have you been doing?

I was swamped in the latest weeks, even my invention was down because of the work, meetings, new things to do, etc., and trying to find a side job to help my family out during this hard time, the issue is that I come home tired but I was trying and looking on the internet anyway, it seems that I found one, I started to study to take the test let's see what will happen in the next days.  I was also doing, some new foods and desserts because you are the first inspiration for everything that I do in my kitchen, and I never forget you, but I haven't had the time to post them.

As you know the fall and winter seasons come with a variety of warming and comforting food, the spices add extras to it, the temperatures are getting down, and we need to feel comfortable not only with coats and boots but with nourishing our bodies from the inside first with those dense nutrients getting into any part to repair and provide all the cells what they need to fight the cool outside, and the flu season as well, it`s not the quantity we eat it`s the quality of the whole foods what's matters most. With all the things we have been through during these tough days when the pandemic COVID-19 does not end, we need to fortify our immune system, and the best way is through food, some natural pills are good too but nothing beats what we eat daily, "let food be thy medicine and medicine be thy food" 'Hippocrates.

Do you remember when your mom gave you carrot-orange juice?  this idea came to my mind to make this cake with the flavor I remember from that time I drank a glass of this juice daily in the afternoon when I came home from school, of course, this is a cake so I made variations and added some warming spices to enhance it, the result surprised me, I could not believe it how rich and moist it is, you can taste a part of the carrot savor and the orange as well. I did it based on my Orange Cake with some tweaks, who hoo! 😍

A piece of Cake that has plenty of time on the fridge.


This version of cake it`s healthy, provides healthy fats, heals the gut, has a bunch of fiber, dairy-free carbs, it`s refined sugar-free, and adds vitamins, and minerals, so why ask for more.  It´s a perfect addition for dessert, snack, or breakfast pairing it with a cup of tea, hot chocolate, or coffee, if I were you for sure I would bring it to my family, especially the children, and grandchildren, it`s a good way to hide vegetables in a cake for those picky ones,  and if you think about the holidays it should be a perfect additional pleasure to the table 😋 to share with your loved and preferred people.

This spectacular Keto Vegan Frosting was something that I wanted to try for a long time, to my amazement, everything I calculated came out perfectly and for my taste, it has surpassed many that I have tried. I made it with vegan butter, coconut cream, yogurt, raw cashews, monk fruit sweetener, and vanilla to mimic the original frosting with cream cheese and butter, oh guys I am so happy to share this recipe with you! it`s so flavorful you won`t miss the original one.

Oops! I know that you saw it messy 😄 sorry-not-sorry I could not wait to taste it out, the frosting was cool but did not set as should be because I did not wait more than 2 hours, I really did not care at all that`s why I show you the picture, after all, it was so good, and that`s the most important thing, right? but please, if you care let it in the fridge for several hours or overnight to let the flavors meld, and the frosting sets and it will be mmm... better than before!  I promise you that next time I make it I will leave here a beautiful whole picture but certainly you can`t eat it 😂 a deal?

On the other hand, I have a simplified recipe for you too, I know how it`s when you arrive home tired and your family asks you to do something sweet and you don`t want to spend much time in the kitchen at all, so the second recipe it`s below, you only blend everything and transfer it to bake, nothing fancy, in minutes you do it and straight to the oven. I like the first one but this is good too.

Baking Time: 35 min
Total Time: 50 min

First Recipe:

Ingredients Cake:
  1. 1 cup cassava flour 
  2. 2 tbsp coconut flour
  3. 1  medium whole orange
  4. 1 1/2 cups shredded carrots or 1 cup grated
  5. 3 eggs at room temperature, separated the yolks from the whites 
  6. 2 tbsp coconut yogurt or another one
  7. 1 tsp baking soda
  8. 1/2 tsp baking powder
  9. 1/2 cup avocado, coconut, or another oil, ghee/butter
  10. 1/2 cup coconut sugar or your preferred one
  11. 1/2 tsp salt
  12. 1/2 tsp cinnamon
  13. 1/4 tsp nutmeg
  14. 1/2 tsp ginger
  15. 1/4 pinch of ground cloves (optional)
  16. 1 tsp vanilla extract
  17. 1/2  cup finely chopped nuts (I used mixed walnuts and pecans)
  18. 1/3 cup soaked raisins or dates chopped into small pieces

How to Make Cassava Carrot-Orange Cake with a Best Keto Vegan Frosting (Paleo, Dairy-Free, Refined Sugar-Free, Gut-Health, Gluten-Free).jpg


Wash, peel, and dry the carrots and the orange,  shred the carrot in a food processor, cut both edges of the orange, chop it in small pieces, pit it if necessary, and transfer it to the food processor, blend and scrape the sides until you don`t see any big piece, set it aside. 

Preheat oven to 350 F, grease, and line the bottom of a 2 or 1 1-8-inch pan. Set aside.

Measure the cassava flour with a spoon and level it, don`t packet it, you won`t want a dense cake.

Add to the rest of the dry ingredients and mix.

Add to the blended orange only the egg yolks with the sugar, salt, vanilla, oil, and yogurt, and blend them together.

Add at once all the dry ingredients at low speed until everything is well incorporated, let sit for 5 minutes to let the flour absorb the liquid.

Beat up the egg whites with the hand mixer, add a pinch of salt until a snow point is made, and set aside.

Fold it first like a third part into the batter then fold the rest, carefully.

Add at once all the shredded carrot, drained raisins, and the mix of chopped pecans and walnuts, and fold them to incorporate,  It will be a semi-dense batter.

Distribute the batter into the 1 or 2 baking pans, and tap twice on the counter. 

Bake it between 30-35 minutes for 1 pan or until a toothpick in the center comes clean. I did it in 1 baking pan, then sliced it in half with a sharp knife but know that the time for 2 baking pans will be less, keep an eye on them, maybe around 20 minutes. If you see it`s darker on the surface put a parchment paper with holes to prevent it burns.
  
Remove from the oven and pass it to a wire rack until it`s completely cool.

Let`s make the awesome Vegan Frosting, I tell you it`s addictive 😋 I had to stop tasting it because there will be nothing to put on the cake.

How to Make a Keto Vegan Frosting?

Vegan Frosting:    

Preparation Time: 5 min
Blend Time:           5 min
Total Time:            10 min     

    Ingredients:                                         
  1. 4 tbsp vegan butter or ghee at room temperature (I used Nutiva)
  2. 1 1/4 cups raw cashews soaked overnight, then washed and dried.
  3. 1 cup of coconut cream from a cooled full-fat can of coconut milk (only the solid part)
  4. 2 tbsp coconut yogurt Greek-style or another one
  5. 2 tbsp lemon juice (start with 1 tbsp, add more to your liking)
  6. 2 tbsp nutritional yeast (taste it to your liking)
  7. 1/4 tsp salt
  8.  3/4-1 cup monk fruit sweetener or another sweetener (adjust to your liking)
  9. 1 tsp vanilla extract  
Soak the raw cashews overnight or for at least 4 hours in hot water.

Wash and dry them with a towel, transfer them to the blender until smooth, add the coconut yogurt and cream, lemon juice, vanilla, vegan butter/ghee blend them together, add the sweetener, and give it the last blend, taste it, add anything it lacks to your taste buds, transfer it to a bowl and put it in the fridge to get consistency for the decoration.

Frost the cake as you like and transfer it to the fridge for about 4-5 hours or overnight until it`s cool and the frosting is set.

It`s to make the frosting for about 1 or 2 hours before the cake and take it to the fridge so it gets thicker and is more manageable.

You can soak the raising with water for half an hour or with anything that you like including vodka or rum because they pair perfectly with this cake, remember to drain them before going inside the cake.

Notes:

Instead of cashews, you can use skinless and raw almonds. 

You can leave the cake naked as I did the first time when I was testing it, fold chopped nuts and raisins, leave them out, or make pecans or other nutballs, The recipe follows below.

If you use a shredded carrot package from store-bought wash it with 1/2 tsp of baking soda diluted in cool water for about 15-20 minutes, then wash it with more clear water and drain it, aways they have been cleaned with chlorine even the organic ones so better to clean it out.

You can make this cake with brown sugar and dairy yogurt, and also change my vegan frosting with another, but please don`t do that 😥 you will miss what I am talking about.

The cake will be fine in the fridge for up to one week in a glass airtight container.

if you use the monk fruit sweetener to make this cake it`s better to use the golden one to give it the appropriate color. 

If you use coconut sugar for the frosting it will darken it.


Pecans Nutballs Recipe:
  1. 1 cup of pecans
  2. 1 1/2 tbsp cacao powder
  3. 1/4 cup coconut sugar + more to coat them (add more to your liking)
  4. 2 tbsp coconut oil/ghee
  5. 1/4 tsp cinnamon (optional)
  6. 1-2 tbsp water
  7. pinch of salt
How to make the Pecan Nut-balls?

Add coconut sugar to a blender or food processor to make a fine powder, add the rest of the ingredients with only 1 tbsp of water, and blend it until smooth, scraping the sides when it`s necessary, if you see it`s too dry add the other tablespoon of water and blend again. Taste it.

Make small or medium balls and if you want coat them with coconut sugar or shredded desiccated coconut.

Transfer them to the fridge until they are cool.

Arrange them on the cake to your liking. Enjoy!

Second Recipe

Ingredients Cake:                                                                                               
  1. 1 cup cassava flour 
  2. 2 tbsp coconut flour
  3. 1 whole juicy, and sweet orange 
  4. 1 medium carrot chopped or shredded 
  5. 3 eggs
  6. 6 tbsp coconut yogurt or another one
  7. 1 tsp baking soda
  8. 1/2 tsp baking powder
  9. 1/2 cup + 2 tbsp avocado, coconut, or another oil, ghee/butter
  10. 1/2 cup coconut sugar or your preferred one
  11. 1/2 tsp salt
  12. 1/2 tsp cinnamon
  13. 1/4 tsp nutmeg
  14. 1/2 tsp ginger
  15. 1/4 pinch of ground cloves
  16. 1 tsp vanilla extract
