Protein Skillet Chicken Thigs (Paleo, Gluten-Free, Whole30)


This is a savory recipe, and easy to make, impress, and makes happy everyone to taste it, the flavors of this dish coming up in your mouth rapidly, the combination is perfect,  you can pair it with rice, quinoa, mashed potatoes, sweet potatoes, a fresh salad like I did, I was waiting for my avocados to ripen, but if I kept touching them, sure I was going to spoil them 🙍

It´s full of proteins of chicken, and bone broth, gut-friendly, loaded with vitamins, fiber, and minerals, provides healthy fats of the coconut yogurt, chicken, and ghee, want more? I don´t.

I agree 100% with the chef Budy Balastro, he said once "... butter makes the difference" and yes all that you do with it or ghee makes the food tastier and you're left wanting more and more 😇 are you with me? you won´t regret you did it!

Preparation Time: 8 min
Time to Cook: Fry the chicken thigs: 5 min, Cook them: 10 min
Total Time: 18 min
The recipe makes 3 or 6 servings


Ingredients:                                   
  1. 2 pounds boneless organic chicken thighs tawed         
  2. 1 scoop of bone broth protein
  3. 1/4 cup of water
  4. 4 tablespoons of organic ghee 
  5. 2 full tablespoons of sun-dried tomato pesto
  6. 1 cup of coconut yogurt
  7. 1 cup of fresh organic seedless grapes
  8. 1 teaspoon of oregano
  9. 1/2 tablespoon of Italian seasoning
  10. 2 1/2 cups of fresh organic baby spinach
  11. 1 medium onion sliced
  12. 3 garlic cloves minced
  13. Salt and black pepper to taste

Instructions:

Season the chicken thighs with salt, pepper, and oregano.             


Into a pot or a skillet and turn on the burner at medium-high temperature, put half of the ghee into.

Fry them until they are brown for both sizes. Take them out to a plate and lower the burner at medium temperature.

Throw the reserved 2 tablespoons of ghee, the onion until they are translucid, then minced garlic cloves until they are fragrant.                                         
Meanwhile, mix the bone broth protein with 1/4 of water, then stir into the cup of coconut yogurt, add the tomato pesto, a pinch of salt, and black pepper, and mix them well.

Pour the yogurt mixture into the pot, add the chicken thighs and Italian seasoning, cook them well for about 10 minutes, turning them once.


Throw the 
grapes into the sauce, I don´t like put them before, because I do like to taste all the savors and textures, but you can do it like that, you can even cut them in half.

Finally, add the fresh baby spinach until it is withered. Taste the salt and pepper, and add them if you need more.

Enjoy a salad or anything you like!

Notes: Adjust the quantity of chicken you want to do, you can do it with chicken breast or chicken legs too, but if you make it with the bone on, the time of cooking will belong. 


You could do a big batch and put it in the fridge, doing this you save time and you can advance food for the week, you eat it one day, another you prepare another meal, and then you repeat it, I have been doing this for a long time.

My sun-dried tomato pesto is organic with pine nuts, but maybe you will use your homemade tomato pesto with or without nuts or buy it.


Also, you can make this recipe with dairy Greek yogurt, or another kind of yogurt is your election.
