Mmmm, here we go again! now with this divine coconut flan! 💘

I am in love with the savor and the texture of it, believe me, it`s perfectly sweet, light, and creamy, with the taste of the magic coconut, did you see that caramel syrup? none can`t resist, do you?

I like milk flan but I can`t eat it, my tummy starts to cry immediately, so I have to find a way to do it without it, and after several tests, this is my final and new recipe for now, ha, ha, I can eat every day if I want to, the other I make before was good but not amazing like this one, you know that testing is the best way until you reach the best result.

I don`t know why a lot of people say to me that it`s hard to make any kind of flan, maybe they skip a step because is one of the easiest desserts you can make at home, the only issue that I think could be possible is the cooking time if you don`t reach it correctly the flan will be undercooked or overcooked with a bunch of holes, so I recommend you that when it is been baking around 45-50 minutes, take the time to watch and test it and see if you have to wait a few minutes more or you have to take it out of the oven immediately, this method works for every flan recipe I have been making for a long time.

I added to the flan gelatin to make it more healthy and full of protein, also it gives a wonderful texture like the original dairy has. This coconut flan is keto if you make caramel at home with these recipes:

For Whole30 people, it can be eaten like that, without any caramel sauce, and there is no sugar added to the flan.

For Vegans, change the gelatin for xanthan gum, that`s it!.

PALEO BEST COCONUT FLAN WITH SUGAR-FREE CONDENSED MILK

Time to Bake: 1 hour
Total Time: 1.15 hours
The recipe makes 8-10 slices




Flan Ingredients:                                                                                                 
  1. 1 can of full-fat coconut milk
  2. 1 1/2 cups or 12 oz coconut condensed milk (bought or homemade)
  3. 5 large eggs
  4. Pinch of salt
  5. 1/4 tsp cinnamon (optional)
  6. 1 tsp vanilla
  7. 1 tbsp gelatin
Caramel:
  1. 1 1/2 cups coconut syrup
  2. few drops of fresh lemon juice
  3. 1/4-1/2 tsp vanilla
Homemade Sugar-Free Coconut Condensed Milk:
  1. 2 cans of full-fat coconut milk
  2. 1/2 cup monk fruit sweetener or any kind of sweetener that works for you
Instructions:

- In a small saucepan pour the coconut syrup ( I used Coconut Secrets) bring it to a gentle boil at medium temperature,  then reduce a medium-low heat, and let it reduce for about 10 min, watch it carefully because could burn.

- Whisk it in vanilla and a few drops of lemon juice.

- Rapidly, pour in a rounded  6" pan, spread it around the walls, and let it cool completely.

- Meanwhile, be preparing the flan.

- Preheat the oven to 350 F.

- In a blender put all the ingredients together. Blend until all is well incorporated.

- When the caramel is cool, pour it into the pan.

- Take a large pan where the flan pan fits widely, put the flan pan inside it, and add hot tap water until it reaches the middle of it.

- Some people like to put aluminum foil on, I prefer the toasted surface, but in this case, after around 40 minutes I saw that it was already toasted so, so I put a piece of parchment paper and opened some holes with the knife. 

- Take it to the oven and bake it between 50 minutes to 1 hour, until a toothpick comes clean. Watch the boiling water, and try to maintain it in the middle of the pan, if is evaporated pour more. 

- Turn off the oven, open the door and let in the hot water for 10 minutes, don`t worry if the center moves a little, it will continue cooking in the water.

- Transfer it to a resting place, until it`s at room temperature.

- Take it to the fridge for at least 5 hours, better overnight. 

- Pass a knife all over the edge of the mold, put a plate on top, and quickly invert it, let the caramel fall on top of it and if necessary take a spoon and scrape what is stuck in the baking pan.

I toasted some coconut flakes in the oven after I made the flan and put it on.

- Cut and enjoy this deliciousness! 😋

How to Make Sugar-Free Coconut Condensed Milk?

Easy peasy!

- Whisk the coconut milk with the monk fruit sweetener.

- In a pot let it boil, stirring from time to time.

- Reduce the temperature to medium to medium-low and let it simmer for 30-45 minutes stirring from time because it can burn, this time is my preference to get the consistency of the condensed milk we are used to, but you can stop it before according to your preferences.

- Let it be cool, then transfer it to a glass jar or container with a lid, and store it in the fridge for up to 15 days. I have to confess that I have been leaving it for up to 1 month.
