I was lazy today, and had an idea because I was craving brownies with a lot of chocolate, and I did not want a lot of elaboration to boil the sweet potato and then mashing it, hmmm, I asked myself how the mix of raw sweet potato, beet, plantain flour, and dates would work together? crazy right?

I said to me, the worst part is that this mix doesn´t work, but what if it works?, once the curiosity came over me, it is impossible for me to step back, so, I looked around and take the raw sweet potato, beet, dates, and I looked inside the fridge, took the almond butter, and eggs, and said let´s do it to find out!

I can say they are very rich, gooey, moist, melt in your mouth, and filling, with the goodness of the chocolate taste, I do not believe it I did them myself, I really recommend you to give them a try, they are very healthy, full-on nutrient-dense, and if you want to nourish your body with a lot of benefits they have, run right now to the kitchen and make this easy recipe, throw everything to blend, and in a little time you have them for sure.









This recipe has a bunch of fiber, good carbs, resistant starches, vitamins, minerals, anti-inflammatory spices, proteins, amino acids, and different healthy fats. It´s like you have a complete meal in a dessert, everybody will love it!.

Ingredients:                                                                                             
  1. 1 medium raw sweet potato peeled and chopped
  2. 1 medium raw red beet, peeled and chopped
  3. 15 dates pitted
  4. 2 tablespoons of plantain flour
  5. 1 cup of almond butter but any nut butter will work
  6. 1 cup of raw cacao powder (cocoa works too)
  7. 2 large eggs
  8. 1/3 cup coconut yogurt or your election
  9. 6 tablespoons of virgin coconut oil, ghee, or avocado oil 
  10. 1/4 teaspoon of salt
  11. 1/2 teaspoon of turmeric
  12. 1 teaspoon of cinnamon
  13. 2 teaspoons of vanilla extract
  14. 3/4 cup of dairy-free, unsweetened cacao nibs, chips work too
  15. 1 scoop bovine collagen peptides grass-fed (optional or plant-based protein)

Preparation of New Nutrient-Dense Chocolate Brownies

Instructions:

Pre-heat the oven a 350 F.

In an 8"x 8" pan, put parchment paper, grease it, and dust cacao powder. Set aside.

In a food processor, throw the chopped sweet potato and raw beet pieces, 2 eggs, vanilla extract, and yogurt, blend them all until smooth, scraping the sides.

Add the chopped dates, and blend again until well incorporated.

In a  double boiler, put the almond butter with the oil and stir until they are warm.

Pour over the mix, and add the 2 tablespoons of plantain flour, cocoa powder, turmeric, salt, collagen peptides, and cinnamon.

Once the dough is well blended, stir in in the half of the cacao nibs. 

Pour the dough into a pan, add another part of the cacao nibs on it, and bake around 40 minutes, or until a toothpick comes out clean.

Allow to cool it about 20-25 minutes before cutting it.

Note:  The Collagen Peptides does not appear in the Nutrition Facts, mine could vary a little between other brands, but I let it here to sum to the label below.

1 scoop (11 g) = Protein:10 g, Collagen Peptides: 11g, Magnesium: 1 mg, Calories: 36, Calcium: 21 mg, Potassium: 2 mg, and 18 amino acids.

The recipe makes 12 brownies (could be more, depends on the size you want them)
Time to Preparation: 10-15
Time to Bake:  40 min
Total Time: 55 min
