Shrimps in Coconut Yogurt-Sweet Ginger Sauce. |
Amazing and versatile shrimps! you can play and make anything with them. I made other recipes using hot coconut milk and tomato sauce, and this one with yogurt and avocado sauces, but I wanted to do it with the coconut yogurt, and it´s breathtaking!
This is a simple and easy recipe, perfect for any station of the year, full of proteins, vitamins, minerals, gluten-free, and healthy fats

Cooking Time: 3-5 min

Cook the shrimps, 2 ways:
- In a pot boil them with salt, 3-5 minutes, depends on their size.
- On a skillet, at medium-high temperature sauté them with butter between 3-5 minutes, add minced garlic, add a dash of salt and pepper to them. Set aside.
In a bowl stir the other ingredients with the coconut yogurt until well combined. Let out the ginger syrup, and avocados.
Toss the cooked shrimps into the yogurt sauce.
Serve in 2 bowls, on them the avocado slices, then the ginger syrup or a mix of honey and fresh ginger.
Enjoy hot or cold, you can warm them in the same skillet.

The recipe serves 2 persons
- 1 pound shrimps, thawed and clean
- 1 cup of coconut yogurt or another one
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- Dash cayenne pepper or sriracha sauce (optional)
- 2 stalks finely chopped celery
- 1/4-1/2 medium onion finely chopped or sliced
- 2 tablespoons minced parsley or cilantro
- 1 teaspoon minced chive
- 1/2 teaspoon minced mint leaves
- 2 avocados
- 2 tablespoons butter, coconut oil, olive oil, etc
- 3 minced garlic cloves
- 2-3 tablespoons fresh lemon juice
- Sweet stevia ginger syrup (optional, or you can add 1/2 teaspoon fresh minced ginger in the yogurt sauce and 2 tablespoons of honey with a splash of warm water)
