I was very hungry yesterday, I made a roasted chicken breast, but I needed something denser with carbs to accompany it, I wanted to try something different. It`s crazy and funny at the same time because several times when you want to do a new thing nothing appears in your mind, or the first attempt is a waste, but from the first moment during the morning that I thought about it, it has been the exact result you are seeing right here.

To corroborate that this was not a fluke 😊 today I did it again, oh my gosh! 💥 but the best of all, I put ground beef inside, more shredded carrot and bent it, mmm it`s like a tortilla, but without having to work and cook each one on a skillet because the waffle maker does the work for you, and they did not break at all!, I bet that you will love it too! I am very happy to be able to cut the time in the kitchen, I am dancing on one-foot will you?

So how could we call them? Waffles or Tortillas? Anything works here, depends on the food you will do and the uses you want for these babies. They are crusty outside and a little chewy inside, I am in love with them.

Each one is loaded with protein, fat, fiber, offering a low glycemic index, carbs that become into resistant starches that heal the gut, raw carrots that have a bunch of vitamins A, also C, B6, minerals:  iron, calcium, and magnesium, and potassium, and sodium, they are gluten-free, paleo, plant-based, and grain-free, want more? I don`t.








Yeap friends, again I am hiding veggies!  🙈 as I told you my son does not like anything that seems not traditional, not known, or invented, with different texture, so I think he has the wrong mama 😂 shhh don`t say anything ok?, only I am trying to find a way to improve his health,  but I know that in general, the persons don`t like to experiment and change too much, there are a lot of them out there that are picky eaters, it`s very normal in children, but the adult people are too. 

Everybody here is learning every day to change almost every aspect of life including to eat well and be better and healthy, am I wrong?

SAVORY CASSAVA-CARROT WAFFLES OR TORTILLAS

Ingredients:                                                                                                       
  1. 4 eggs
  2. 2 cups grated or shredded raw carrot
  3. 6 tbsp cassava flour (not tapioca flour)
  4. 1/4 -1/2 tsp pink or sea salt (start with less, then you can add more)
  5. 3 tbsp chopped onion
  6. 1/2 tsp ground garlic
  7. 2 tsp minced chives
  8. 1 full tsp baking soda
  9. 1/4 tsp ground ginger (optional)
  10. splash coconut or another vegan milk
  11.  ghee, olive, coconut or avocado oil for greasing the waffle maker

Instructions:

Grease your waffle maker and set aside.

In a food processor grate the carrot, or you can do it with a

Beat the eggs with salt, add the cassava flour until fully incorporated, then incorporate the other ingredients and the grated carrot and stir well.

Preheat the waffle maker at high temperature, wait until hot.

Spread the batter evenly, and cook it until is crunchy outside and golden brown, if you like less crunchy, take it out when it's done.

Enjoy it with any meat +veggies, or only veggies. you can cut it in half and eat like 2 slices of bread with any filling in, or make 2 if you are hungry enough.

The recipe makes 4 Belgian waffles.
Time to Preparation: 5 min
Time to Cook it: The time it takes you, waffle maker.
Total Time: around 12 -15 min

Note: You can add or remove any herb or seasoning to your liking.

I made them: the first time with grated raw carrot, the second time with shredded, both work perfectly.

Recipe for One Belgian Waffle:

Ingredients:

  1. 1 egg
  2. 1 1/2 tbsp cassava flour
  3. 1/2 cup shredded or grated a raw carrot
  4. 1/4 ground garlic
  5. 1/2 tsp chives
  6. 1 tbsp chopped onion
  7. 1/4 full tsp baking soda
  8. Pinch of salt
  9. 1 tbsp any milk
  10. oil to grease the waffle maker
