I am not a fan of bread, I like most salty crackers, and if I want some slices, I prefer a toasted french one.

There are days that I am craving bread, and I go for it but I prefer making it on my own.

This recipe is very easy to do, is savory and spongy, and does not break easily, also is paleo-friendly, gluten-free, and grain-free, loaded with good quality oil, and gluten-free flours, provides energy, carbohydrates, vitamins, and minerals that keep your well-being in general. I changed part of the recipe and it worked very well.








I add nutritional yeast to give it a light cheesy flavor and increase the health benefits of this bread because it provides vitamins B1, B2, B3, B6, B12, folic acid, fiber, and protein with 9 amino acids, probiotics, carbohydrates, calories, sodium, selenium, and zinc.

What is Nutritional Yeast?

Is an inactive yeast, is growing over the mix of beet molasses and sugar cane, when the fermentation is done, is collected, washed and dried at high temperatures to stop this process, that´s why is inactive.

You can find it in the markets and can come in flakes, powder, and granules.

It has a nutty-cheesy taste.

It´s recommended for athletes, vegan, and convalescents persons.

  • Aids digestion and diarrhea symptoms.
  • Has antibacterial and antiviral properties.
  • Nurtures the skin, hair, and nails.

CASSAVA FLOUR SANDWICH BREAD (Paleo, Gluten-Free, Grain-Free)

Ingredients:                                                                                    
  1. 1 cup sifted cassava flour                                                 
  2. 1 cup fine almond flour, or almond meal)
  3. 1/4 avocado oil or olive oil.
  4. 1 teaspoon of apple cider vinegar
  5. 1 teaspoon of baking soda
  6. 6 eggs
  7. 3 tablespoons of honey or maple syrup
  8. 1/2 teaspoon of Himalayan salt
  9. 1/4 cup nutritional yeast (optional)

    Instructions:
             
    Preheat the oven to 350 F.                                                          

    Put the dry ingredients in the food processor and mix. You can do it also with a spatula, separating the dry ingredients of the wet, in a bowl, mix the dry ingredients well, another bowl with the beaten eggs, oil, salt, and vinegar, throw them over dry, and combine well.

    Mix the wet ingredients and throw over the dry ingredients, to blend them. (the consistency will be runny, more than other bread recipes)

    Toss into a greased loaf pan (the standard one).

    Bake for 40-50 minutes (depends on your oven).

    Note: If you don´t want honey, add only 1 tablespoon of it.
    Adding 2-3 tablespoons more of honey and 1 teaspoon of vanilla, you will have a savory pound cake.
    It toasts nicely.

    The recipe makes 10-12 slices.
    Preparation Time: 8-10 min.
    Bake Time: 40 min.
    Total Time: 50 min.
