Oh, My Gosh, guys! This cake is too I n c r e d I b l e! To be true I am hooked on it, I can't stop eating it, no one will know how it was made, and what's inside it? my little granddaughter ate almost the fourth part of it at different times, and she loved it, shhh... she doesn't like vegetables, I am so happy! It is so moist and chocolatey, I wouldn't trade it for anything in this world, and... the best part? it's a good way to hide the vegetables in the batter for those that don't like them, especially children, and you don't have to have any special equipment only grate in the food processor or manually with the grater box (it was what I did), do you like the idea?

As I told you in a previous post, you can make the Orange Chocolate Marbling with this recipe instead of Otto's but only you have to cut the recipe in a third or a half.

I am in love with cassava in general, and cassava flour makes the difference in anything that you want to make,  it works as wheat flour even though it is a gluten-free flour but sorry guys if you are following a low-carb diet because it does have carbs but lesser, than other flours, adds fiber, vitamins, and minerals, it's gut-health so if you suffer for leaky gut follow this kind of flour or it's own root, it will make you feel well.

Some months ago I paid for a course about how to work with the inputs that mother nature gives us, I am working on it, and I will try to develop recipes will almost no ingredients the result is fascinating, stay tuned to see the simplicity of them.

Sometimes I have something that says to me, let's come to the kitchen and make magic differently so everyone can enjoy, some days the recipe is unique you can see in my post, other days, I have to start again until you can enjoy a final dessert or meal. From time to time I am too lazy to post meals or desserts, I get busy, and/or tired, and even if I have in mind a recipe to put or a picture of what I did, life and family are more important, and  I'm delaying putting them.  I'm the only one who manages my blog, everything you see here is made by myself without knowing anything about HTML, and everything else that comes with having a website. Sometimes Google sends me a warning and I stay there for hours trying to figure out what it says or what I have to do to make it work, you should know that it's hard when you don't have the necessary money to massively reach the whole world for helping you to have better eating habits that's my great aspiration, I ask a lot?

 Eating healthy is easy once you know what your body needs for feeding correctly, and avoid what is not good for you without suffering a bit, when you use natural ingredients available everywhere, for example, these root vegetables are natural, less expensive but full of nutrients, add fiber, they are sustainable food but of course but you'll have to put your hands on them to make chemistry and enjoy the final product in a short time, this is better because you are standing, and moving your body instead of being sitting all day, a little exercise works along the way, right? or thinking of eating something that it doesn't good for you.  I will give you an example, at my work, they always brought donuts or cookies at the end of the week in all colors and flavors, I didn't look at them, they didn't interest me, and they almost put them in front of my eyes, I explained to them that I simply didn't want to eat them, and I thanked them for bringing those treats to me because they don't sit well on my stomach, so usually I am trying to eat at my home the food, and desserts I cook, and always there is a time to share it with them, and they get amazed of the result, and taste of what I bring to them.
 
Oh well, I get you distracted with my conversation here 😅 so let's get about the explanation of this yumylicious recipe!  The first time I did the Marbled Orange-Chocolate Cake with the recipe of Otto's Naturals I was thinking of making my own chocolate cake recipe, so here I am writing it to you. If you make it separately it's totally fine but if you do the chocolate marbled with this recipe make half of this, if you are ambitious, and have more family or friends to share it, let's do both complete recipes, only you have to have a large pan, I am thinking... 
an 8x13-inches pan, or bake them in two 8-inches different pans, put one over the other, and make a wonderful frosting, or a naked frosting in the middle between both, and on the top, mmm... it should be a good-looking cake. Do you want to make it for Mother's Day?  will be totally fine, and healthy, and your mom and grandma will be so happy! what are your thoughts about it?

As I said, you don't need any fancy equipment for this recipe, it's made in no time, grate the beets or another vegetable, and remember to put it into an airtight container to keep it fresh and wet until you use it, and if you made more than the recipe calls for taking it to the freezer, and you have it grated for the next time, defrost it and use it.
 
Put into the bowl the dry ingredients, stir them, put the wet ingredients together, and add the unsweetened chocolate chips giving them a good stir.

In a bowl, food processor or blender put the wet ingredients in the order you see below, beat, and put the dry into the wet stirring in 3 batches until there are no more lumps in the batter don't over-stir it, let it rest for 5 minutes or so, and transfer to the pan to it be baked. That's it!

It will be a savory gift for Mother's Day or any special occasion you want to or why not today or any other day you are craving a healthy chocolate cake?...

Preparation Time: 15 min
Baking Time: 30 min
Total Time: 45 min


Ingredients:
  1. 3/4 cup cassava flour
  2. 2 tbsp coconut flour (omit if you want a denser cake)
  3. 1/3 cup cacao or a dark cocoa powder
  4. 1/2 tsp instant coffee (optional)
  5. 2  large eggs (room temperature) 
  6. 1 cup raw finely grated beets, zucchini, pumpkin, sweet potatoes
  7. 3/4 cup coconut, date, or maple sugar (any kind of sugar or sweetener will work)
  8. 1/2 tsp salt 
  9. 3/4 cup of any warm nut milk you like, I use coconut milk (any kind will work)
  10. 1 tbsp lemon juice or apple cider vinegar
  11. 7 tbsp coconut  oil melted, avocado oil, or ghee (butter melted will work too)
  12. 1 tsp baking powder
  13. 1/2 tsp baking soda
  14. 1 tsp vanilla extract 
  15. 1/2-3/4 cup unsweetened dark chocolate chips or a bar cut into small pieces (optional but highly recommended)

How to Make the Best Cassava Flour Chocolate Cake?

Preheat the oven to 350 F.

Grease an 8-inch spring pan on the bottom parchment paper or use a non-stick bundt cake.

Grind the beet with the hand of a food processor until a kind of rice is made, don't make a puree.

In the food processor, by hand or electric mixer put the eggs, vanilla, and salt, and beat them, add the sugar and beat well to make the eggs airy for about 30 seconds, and you won't see the remaining sugar in the bowl, add the warm milk, and the teaspoon of lemon or vinegar, stir and throw the raw grated beet of your election, stir it, no blend it, and set aside.

In a medium bowl sift the cassava flour, coconut flour, cacao or cocoa unsweetened, baking soda, and powder, and stir to integrate well. 

Dump the wet ingredients in two or three batches into the bowl with the dry mixed ones, or do it the other way around because in this case, "the order of the factors does not alter the product" 😇 stir with a spatula until well combined, and no lumps remain, add chocolate chips stir well. It will seem at first very liquid but when you finish let it rest for 5 minutes or so, and it will become thicker.

Transfer it to the pan, and bake it for around 25-35 minutes or until a toothpick inserted in the center comes out clean, don't overcook it.

Let it rest in the pan for about an hour or until it is cooled down, it's very delicate, and it will break out, pass a knife or a silicone spatula around the borders, put a plate on the border, and turn it around.

Enjoy with a chocolate frosting, vanilla ice cream, or anything that makes your belly happy.

Note: If you want a layer cake, double the recipe or make it with this recipe in 2 small pans about 6-inch long each (you have to adjust the baking time to less), you can make this Keto Vegan Frosting if you like the color of this Beet Red Velvet FrostingEasy Vegan Chocolate Frosting or Chocolate Coconut-Frosting but you can also, can leave it naked to accompanied with a cup of tea, milk, chocolate, coffee, etc.

If you take off the coconut flour, the result will be like a brownie, remember you have to adjust the baking time, maybe it will need 5-10 more minutes but don't over-bake it.

I did the recipe with coconut sugar, coconut milk, and a grated beet by a hand grater. Still, it can be made with any kind of sugar, milk (depending on your preferences or diet) fresh zucchini, sweet potato, or pumpkin.
