Trust me, this bread it´s amazing, the smell was in all my house, the neighbors asked me what was baking? They wanted a slice of it.  For my taste, it´s more delicious than the pumpkin puree bread, pleasing nutty and earthy flavors, it´s wet and airy. This is not sweet bread, but you can change the ratio of the sweetener if you like it.

In my mind, I can recreate when I was a young girl, my father gathering some of the pumpkin seeds and putting them to dry in the sun, and then he roasted them in a pan.

Like the majority of you, I like pumpkin seeds, they are a tasty treat and also a good healthy option because they have powerful nutritional values to include in our diet.

Some months ago, I bought a cheaper package of organic pumpkin seeds from Amazon but were unroasted, that no worry me, I can roast them at the moment, 170 F for about 20 minutes is enough, so I was using them for other recipes also like this one.

They are very versatile both for salty and sweet foods, as well as a snack, but I did not realize to make a bread or muffin recipe with their flour until I saw this information shared for Jesse Schwartz, President of Living Tree Community Foods on Linkedin, since then, I have been wondering how would I develop a recipe for the entire family because all we need healthy options for our loved ones and for us to combat the obesity and health issues.

There are a few recipes for this flour, one of them is the Paleo Foundation, which I like, but I wanted to do it my way.

These seeds are full of high-density nutrients, low in calories, rich in vitamins, A, C, B2, B3, B5, B6, folate, E, and minerals, magnesium, copper, manganese, phosphorus, zinc, iron, selenium, and calcium, fiber, carbohydrate, protein, omega-3, and omega-6.

    Once I thought enough, I knew what would be the way to make this kind of bread, I wanted coconut flour into it, to enhance the fiber, protein and reduce the carbohydrate, also it´s diabetic-friendly. This is my result, but feel free to change anything, including other gluten-free flours to work with.

    What I try to inspire you today, is the result of the mistakes I made in my diet in the past, I had to learn the path of what to put in my mouth, studying on my own, so as always, I love to provide recipes to motivate you to have better options and change the habits of alimentation. 


    SPICED PUMPKIN SEEDS FLOUR BREAD (Paleo, Gluten-Free, Dairy-Free, Sugar-Free)

    Preparation Time: 10-15 min
    Baking Time: 50 min
    Total Time: 1:05 hours
    The recipe makes 9-10 slices of bread



    Ingredients:
    1. 1 cup of pumpkin seeds flour
    2. 3/4 cup of coconut flour
    3. 2 tablespoons of organic psyllium husk
    4. 1 teaspoon of turmeric
    5. 2 tablespoons of stevia pumpkin spice syrup or dried pumpkin spice
    6. 1 1/2 teaspoon of powdered stevia, or 9 drops of liquid stevia (can be substituted for another sweetener)
    7. 3/4 cup of virgin coconut oil, ghee, avocado oil, or grass-fed butter melted
    8. 8 eggs
    9. 1/4 cup coconut milk or your choice
    10. 3/4 teaspoon of Himalayan salt
    11. 1 1/2 teaspoons of baking powder
    12. 2 teaspoons of apple cider vinegar
    Instructions:

    Pre-heat oven at 300 F.

    Grease a bread pan 5"x10" or 5"x9".

    In a bowl stir the pumpkin seeds flour with turmeric, powdered stevia, psyllium husk, and baking powder, measure the coconut flour but don´t mix it with the other ingredients. Set it aside. If you are using dried pumpkin spice, add it here.

    In a bowl beat well the eggs, salt, stevia pumpkin spice syrup, and coconut oil, once done, measure the apple cider vinegar and whisk again.

    Pour the liquids on the dry ingredients stirring until well incorporated, then add the coconut flour. Check if the dough does not have any lumps. Let sit for 5 minutes.

    Pass the mixture to the bread pan, spreading evenly.

    Bake between 45-55 minutes, depends on your oven. Mine was done at 47 minutes.

    Let it cool for about 30 minutes, run a knife through the edges, and pull it out.

    Enjoy breakfast, snack, lunch, or dinner with your preferred food!.

    Notes:

    I ground the pumpkin seeds, but you can buy their flour, or grind them.

    If you have dried pumpkin spice instead of syrup, adjust the quantity, between 1-2 tablespoons to your liking.

    You like it sweeter? adjust it, change for erythritol, swerve or 1 tablespoon of maple syrup, honey, or coconut sugar, etc
