Mmm, do you like how this sweet bread looks like? I would like if I could put here the smell and taste that it had, I am really impressed, and to be sure, I not only left my family to eat it but I took a piece to some coworkers and they died, they told me that not only it was good but it was extremely rich, Woow!, that´s great for me!

It´s super moist, did not taste of sweet potato at all, is paleo, and gluten-free, grain-free, without refined sugar, nourish your body, you will taste a new thing with a bunch of health benefits, and a lot of tasteful unsweetened chocolate, oh yes! please.

I think it´s a good option for kids that don´t like to eat, maybe to send it as the school snack or part of the lunch, because is full of proteins, gut-healthy,  healthy fats, fiber, and carbs.  

First, of all, do you know what yucca/cassava root or tuber is? and the benefits we obtain to eat it?. The yucca root also is known as cassava, yuca, manioc, is a vegetable that undergrows in subtropical climates, is a dense starchy and nutrient-rich food, but it´s gluten-free and grain-free, is a staple food in many countries, can be a substitute for potatoes, yam, sweet potatoes, plantains, and taro root,  this root is abundant in carbohydrates, calories, and vitamin C,  has fiber, folic acid, thiamin, folates, B6, pyridoxine, pantothenic acid, riboflavin, vitamin K, E, and A, minerals like calcium, iron, magnesium, phosphorus, zinc, and manganese, electrolytes as sodium and potassium,  is very low in fat and protein but has more protein than yam, potatoes, and plantains, and also has resveratrol, saponins, and phytonutrients.

The flours of the yucca are cassava and tapioca, the cassava flour is a whole dried and ground yucca root, and it has more nutrients than tapioca, the tapioca is the starch extracted from the cassava root, it´s all almost carbos, with them you can do anything, thick sauces, soups, and stews, to make pudding or pie filling, to coat and fry fillets of any meat or fish, or to bake with.

Once you know that, I suggest you give it a try, I love it, it´s common to eat it in my country, mashed, fry it, cakes, yuca with mojo, sweet and salty bread, pie, pizza, chips, it has a nutty flavor and it is very nutritional, so, what are you waiting for?

SWEET POTATO-CHOCOLATE BREAD (Paleo-Gluten-Free, Grain-Free)

Preparation Time: 15-20 min
Baking Time 50-60 min
Total Time: 1:20 hour
The recipe makes around 9-10 slices


Ingredients:
  1. 1 1/4 cups of mashed sweet potatoes
  2. 3/4 cup cassava flour
  3. 1/4 cup coconut flour
  4. 2 tablespoons of coconut sugar
  5. 3 tablespoons psyllium husk
  6. 2 tablespoons nutritional yeast 
  7. 3/4 teaspoon  Himalayan or sea salt
  8. 1 teaspoon cinnamon
  9. 2 scoops of multi-collagen protein (optional)
  10. 1 teaspoon baking powder
  11. 3 1/2 tablespoons honey or maple syrup
  12. 5 tablespoons  ghee, butter, or coconut oil melted
  13. 4 large eggs
  14. 1/3 cup of chopped or sliced almonds or another nut (optional)
  15. 1 teaspoon of vanilla extract
  16. 1 tablespoon of pure almond extract or another (optional but it's worth it )
  17. 1 tablespoon of coconut or apple cider vinegar
  18. 1 1/2 cups unsweetened dark chocolate chips divided

Instructions:

Pre-heat oven at 350 F.

Grease a bread pan and set it aside.

Boil or bake the sweet potato, which could be about 2 mediums or 1 big, mash and measure it in a cup. You can do it the day before as I did and reserve it in the fridge until you can make it.

In a bowl put the cassava and coconut flours, cinnamon, salt, nutritional yeast, psyllium husk, coconut sugar, and collagen protein, stir all.

In another bowl beat the eggs, maple syrup, almond, and vanilla extracts, then add the melted ghee, and finally, the vinegar beat well.

Add parts of the liquid ingredients into a dry until all it´s well incorporated.

Fold in 1 cup of the chocolate chips.

Transfer to a bread pan.

Distribute the sliced almonds and 1/2 cup of the chocolate chips on the top of the batter.

Bake between 50 minutes to 1 hour.

Let it cool for 30 minutes or more.

Enjoy as a breakfast, brunch,  dessert, or snack. I love to put more butter on it, yum!

Notes: You can do it without the bone broth multi-collagen protein, nutritional yeast, almond extract, and the almonds, I put them to enhance texture, savor, and protein intake.

This bread can be made in batches and freeze it. It´s good between 1 week to 10 days in the fridge in an airtight container or into a Ziploc bag.

I have been in issues with the nutritional facts because the psyllium husk, nutritional yeast, and the collagen protein don´t appear in the nutritional facts,  so I am going to let the information for you to know.

1 slice of bread has 9.73 g protein, 17.93 g total fat, saturated fat: 5.33 g, trans fat 0.3 g, cholesterol 100.03 mg, sodium 291.22 mg, carbos 34.7 g, Fiber 8.10 g, sugar 12 g, plus vitamins, minerals, potassium, sodium and the benefits of 3.3 g of the bone broth multi collagen protein.
