Paleo Vanilla Cake, Chocolate-Coconut Frosting (Nut-free, Paleo) |
The celebration of February 14th is coming, is a good day to share your love, not only with your couple but with your friends too.
I have recipes and tips to make this day that I hope you enjoy, the problem is that I am running out of time, but I am going to try to make it happens, for my friends and for you all.
This recipe is easy to do, is very moist, delicious, is gluten-free, nut-free, paleo-friendly, with healthy ingredients to nourish and protect your body.
You can mix the ingredients with a spatula or put it all in a food processor. The recipe makes a big cake, 2 springform pans of 9", but if you want it, you can make half of the recipe for 2 pans of 6" each.
Let´s go to the kitchen!.
Preparation Time: 10 min
Baking Time: 40 min
Total Time: 50 min
Frosting Time: 5 min
Recipe makes 12-14 slices of cake
INSTRUCTIONS
Pre-heat oven to 350° F.
Mix the coconut flour with the baking soda.
Add the egg one by one, vanilla extract, and honey.
Grease the pans and pour the batter into them.
Bake for 30-40 minutes (depends on your oven)
Let it cool well before frosting it.
PALEO CHOCOLATE COCONUT FROSTING
INGREDIENTS
INSTRUCTIONS
Shake well the coconut cream.
In a bowl throw all ingredients, except the cocoa powder.
With an electric mixer, mix them at high speed around 1 minute.
Reduce the speed to medium, add cocoa powder a little by little until well combined.
Wait until becomes thick enough.
Let it cool in your refrigerator, until it`s firm and set.
Then, frost the cake, put it in the refrigerator until you are going to grab a good glass of wine, and enjoy it!. Yummy!
Notes: If you want to make the frosting with coconut milk, check that you have 2-3 full-fat cans, keep them at least 8 hours before in your fridge, and do not shake them, open and scope the cream, and continue with the other ingredients the recipe calls.
The frosting yields around 3 cups.
Notes: You can make half of the recipe if you want to.
