Well, friends another kind of waffle today, mmm, oh yes, please! I don`t like boring food, so as you see I like to do new things all the time, also I am trying to find alternatives ways to incorporate more healthy carbs, fiber, and starchy roots like malanga o taro, sweet potato, yuca (cassava) those that in my country are common but there aren`t. 

Have I told you am I a fan of taro root, malanga, and plantains? I can`t describe how I love them seriously, and if you see all my posts I made both mashed and fried and described how to make the best mashed on this post, and on this one, I made bread with them. Among their properties that I have described here and on that one, if you want to see them.

Taro root and malanga are similar, but they are not exactly the same, the malanga/yautìa belongs to the genus Xanthosoma, and taro belongs to the genus Colocasia, the taro conserves the softness although it is cold while the malanga (yautìa) are more crumbly and need more grease and milk or broth to help make it smoother, it`s smaller than the taro root and has different shape too. You need to remove the skin with a sharp knife or peeler, and clean with abundant water before cooking them to reduce to almost nothing the antinutrients components such as oxalates, cyanoglucosides, phenolics, phytic acid, cyanide, heavy metals, protease inhibitors, etc. those have adverse effects on our health.

I was cleaning my fridge and saw that I had a container with this heavenly puree I made two days ago, you can do it too with leftovers of it, or double or triple this recipe.  I was trying to make my lunch easy, but I was starving!  I did not want to cook at that moment and was alone in my house, and thought could I have a waffle with this? ok, let`s do it to see what result I will have.

PLANTAIN-MALANGA WAFFLES (Paleo, Whole30, GF, Nut-free, Grain-free, Plant-based)

Preparation Time: 15 min 
Cooking Time:10 min approximately
Total Time: 25 min
The recipe makes 2 waffles


Ingredients:                                                                                                       
  1. 3/4 cup mashed ripe plantain and malanga (about 1 ripe small plantain and 1 small malanga)
  2. 1 large egg or 1 flaxseed egg
  3. 1/4 tsp pink or sea salt
  4. 2 tbsp onion finely minced (optional)
  5. 1 garlic clove finely minced or around 1/2 tsp ground garlic
  6. 1/4 tsp fresh cracked black pepper
  7. 1/2 tsp chives minced or dried
  8. 1/4 tsp baking soda
  9. 1/2 tsp baking powder
  10. 1 full tbsp ghee, coconut oil, or another oil, more to grease the waffle maker

Instructions:

Remove the peel of the taro and ripe plantain, and chop in chunks.

In a pot with water and salt, throw first, the malanga to boil, wait approximately 5-6 minutes, and then add the ripe plantain chunks.

When they are tender, taste them with a fork or knife, drain them properly and mash them together with all the ingredients except the egg, taste it and add more salt and black pepper if needed.

Let it completely cool, you can put it in the fridge for about 1 hour or overnight so that it releases the starches better.

Beat the egg and mix it with the mashed plantain-taro puree, better with a fork to integrate it into the batter.

Grease the waffle maker and turn it on at a medium temperature, don`t put it at a high temperature because the ripe plantain has sugar in it, so it will burn outside but won`t cook properly inside.

Check it out till it is nicely golden brown. Don`t worry if the maker it`s turning off and then turning on, it`s normal until you will see they are well cooked.

Customize them with anything that you want.

Enjoy!  It can be used for breakfast, brunch, lunch, or dinner!
