Savory Almond Flour Pancakes.


I really a fan of pancakes, someone else? 🙋 you can make them the way you want them, savory or sweet. 

Sometimes I do not feel like making elaborated food, and almost always they come to my mind, who says that they are only for breakfast can`t I substitute lunch or dinner with them? of course yes, that's why I came up with this recipe, I forgot to take the measurements when I did it, so I had to do it again to be able to write everything down.😁 do you say that was my excuse? no, I was so excited that almost did not take the picture.

The smell, texture, size, was perfect, as you see, the composition of almond flour, fats, proteins, collagen, seasonings plus the turmeric, make it low in carbohydrates, gluten-free, paleo, and keto, which allows our body to take advantage of all its benefits, do not get inflamed and feel full for more time without compromising our health.

SAVORY ALMOND FLOUR PANCAKES (Paleo, Keto)

Total Time: 25 min
The recipe makes 2  thick pancakes feel free to double or triple it.


Ingredients:                                                                                
  1. 1/2 cup + 1 tbsp almond flour                                          
  2. 2 medium eggs
  3. 2 tbsp coconut milk or other milk
  4. 1/4 tsp Himalayan or sea salt
  5. Pinch of black pepper
  6. 1 scoop of collagen protein
  7. 8 finely slices of chorizo 
  8. 2 tbsp chorizo fat or coconut oil
  9. 1/4 tsp turmeric
  10. 1/2 tsp baking powder
  11. 1/4 tsp baking soda
  12. 1/2 tsp dry chives
  13. 1/4 tsp garlic powder
  14. coconut or avocado oil for frying
  15. any keto or paleo syrup, or honey for drizzling (optional)
Instructions:

In a bowl throw the dry ingredients, except the sliced chorizo, and stir.

In another bowl whisk the wet ingredients.

In a small pan put the sliced chorizo at medium-low temperature until the fat in them starts to melt, but don`t let them dry, is only to get its fat, but if you don`t want it, mix the slices with the wet ingredients. 

Once you do this process, take the slices out and wait for the fat to be warm, and incorporate it with the wet ones.

Gradually incorporate the dry ingredients into the wet until it's a smooth batter.

Into a greased pan put half of the batter, at medium-low temperature, cook it until small bubbles appear and it is separated from the edges, you can put a lid if you want to cook it more rapidly.

Flip it until is cooked through for the other side.

If you want, drizzle with any syrup, mine was with honey, super delicious!

Serve accompanied with a green salad.

Note: They could be made with bacon, ham, cooked meat, chicken, ground meat, etc.

My pancake was only one with everything that you see as ingredients, I made it in a small skillet to conserve its form.
