2 Sweet Potato Waffles (Tasty and Chocolate)

Before I start the description of the recipe I want to make a parenthesis because tomorrow this post will be live.

If I ask you what kind of waffle do you like?😕 what answer would you give me?, mmm I really don`t know what`s to choose, I think depends on what you want that day, right? sometimes we need more salty food, in another time we are craving for something sweet, anyway these recipes are very easy to make, doesn't need any special equipment, of course, you can use a food processor or grate it, but if you don`t have it, it`s ok with a potato peeler like I did. The original recipe is from Paleo Gluten Free Eats, but I wanted to make it with variations, I did not want to grate the sweet potato.








I did it savory with species for my lunch accompanied with tuna and avocado, and the other one with chocolate and collagen, blueberries and coconut nectar that I am in love with, but feel free to do it the way you like it.

Both are very tasty, they are versatile, you can put any topping, meat, veggie, etc. a good way to incorporate healthy fat, protein, fiber, carbs in one meal, could be breakfast, lunch, dinner, dessert or snack. I was wondering which picture put first, but I decided to put the tasty one because I think is lesser common,

I am going to let here the two recipes I made and tested. I really love them, try it and let me know how they turn out. 



TASTY SWEET POTATO WAFFLE

Ingredients:                                                                            
  1. 1 egg
  2. 1 small raw sweet potato shredded or a small piece of a big one, about a cup
  3. 1/4 tsp ground garlic
  4. 1/4 tsp ground onion
  5. 1/2 tsp dried chives
  6. 1/4 tsp dried parsley
  7. 1/4 tsp turmeric
  8. Fresh cracked black pepper
  9. salt to taste (a little more than when you do an omelet)
  10. Ghee, butter, avocado oil, coconut oil to grease the waffle maker

    Beat the egg and add all the other ingredients. Set aside.                                  

    Peel and shred the sweet potato.

    Coat evenly the waffle maker with oil, then turn on.

    Throw the shredded sweet potato into the beaten egg. Mix everything together.

    Cook it until is fully cooked, crispy and golden brown.

    Enjoy with salad, any meat, or anything that you like, as a breakfast, lunch or dinner.

    CHOCOLATE SWEET POTATO WAFFLE

    Ingredients:
                                                                                      
    1. 1 small raw sweet potato shredded
    2. 1 large egg
    3. 1 fullest tbsp cacao powder
    4. 1 swerve or the equivalent of any sweetener
    5. 1/4 tsp pink salt or sea salt
    6. 1/4 tsp ground ginger (optional)
    7. 1/2 tsp cinnamon
    8. 1/2 tsp vanilla extract
    9. 1/2 scoop collagen peptides (optional)
    10. Ghee, butter, avocado oil, coconut oil to grease the waffle maker

    Process to make Chocolate Sweet Potato Waffle (Paleo, Gluten-Free, Keto, Whole30, Grain-Free, Refined Sugar-free).jpg
    Instructions:


    Beat the egg and add all the other ingredients. Set aside.                      

    Peel and shred the sweet potato.

    Coat evenly the waffle maker with oil, then turn on.

    Throw the shredded sweet potato into the beaten egg. Mix everything together.

    Cook it until is fully cooked, and crispy.

    Enjoy with fruits, honey, maple syrup or anything that you like it!


    Notes: My waffle maker is Belgian so it`s bigger, if you do it in another kind smaller, maybe you will have 2 or more waffles, so feel free to double or triple it.

    This recipe makes one Belgian waffle. 
    Time of Preparation: 5 min
    Time to Cook: depends on your waffle maker 
    Total Time: Around 15 minutes.



    Original Recipe: (Serving: 6 small)

    Ingredients:
    1. 2 large eggs
    2. 4 cups sweet potato grated
    3. 1/4 tsp salt 
    4. olive oil to grease the waffle maker
