I haven´t made this soup for a while, but I love it. It´s very creamy, palatable, and fills you up. My mom used to do it, but I think is slightly different from the others I have seen, she made it with fried banana chips, and they are awesome! believe me. It´s perfect for lunch or dinner, for a sick person, and kids, and it´s paleo,whole30, AIP, gluten-free, and grain-free.

Green plantains provide many nutritional benefits because have many vitamins and minerals to bring, some are Vitamins A, C, and B6, Minerals: iron, potassium, and magnesium, also they have protein, carbohydrates, calories, and fiber in the form of resistance starch, that means that your stomach can´t digest it, but when it´s going to the large intestine, is fermented, and is good for your gut flora, helping absorb more easily the probiotics, and prevents some diseases.

Besides, a good bone broth is the other key to this recipe and it´s very tasteful. You can make it at home, (simmer in very low temperatures for long hours the bones, marrows, cartilages, ligaments, and organs) or buy it in liquid or powder form, try to have a good one, No-GMO or completely organic are the best. 

You should take bone broth regularly, it has outstanding benefits and is one of the healthiest food itself, which provides essential amino acids, protein, vitamin A,  minerals iron, calcium, selenium, magnesium, phosphorus, and sulfur, manganese, omega-3, healthy fats, and lipids.

My mom´s recipe is not complicated to make, a little time to fry the plantain chips.  You can buy them from the store, but I think they don´t taste the same as this one, also the majority, have been fried into not good oils. Maybe, if you want. you can fry them in advance, store them, and make this creamy soup when you have more time, if you don´t eat them all first, ha, ha, because they are delicious, believe me.


MOM´S FRIED GREEN PLANTAIN CHIPS SOUP (PALEO-AIP, WHOLE30)

Preparation time: 10-15 min.
Time to fry and cook: 20 min.
Total Time: Around 35 min.
The recipe makes around 4 servings.
                                                                                                 
Ingredients:

  1. 2 green plantains, peeled and cut into chips
  2. 6 cups of bone broth protein (chicken, meat, and pork will work)
  3. 1 big onion chopped
  4. 4 garlic cloves chopped
  5. salt to taste
  6. black pepper to taste
  7. 1/4 cup chopped cilantro or parsley, separated some for decoration
  8. 1 tsp oregano (optional)
  9. Dash of cumin (optional)
  10. 1/2 cup of coconut oil for frying (to cover them)
Instructions:

Remove the peel from the plantains and cut it into chips.

Put a skillet with the coconut oil at medium temperature, when it's hot, throw the plantain chips in batches to fry, try to separate them (this makes them crispy)

Take a bowl or plate with a kitchen towel and let them in it, to absorb the excess oil.

When you are done, take off the oil of the skillet and let about 2 tablespoons of oil in it.
                                                                      Caramelize the chopped onions, then the garlic, and add part of the chopped parsley, stir.

Mix with the bone broth, which is at room temperature or warm. Add the other ingredients. Note: If you have a bone broth protein in powder, mix 3-4 scoops with 12 oz water each one and you can proceed with the recipe.

Blend part of the plantain chips with the bone broth until smooth, and put this mixture into a pot up until you have finished.

Bring the pot to the stovetop and boil it, then reduce the temperature and simmer the soup for around 10-15 minutes until desired consistency,  taste, and adjust the salt and pepper.
                                                                   
Serve with more parsley or cilantro.

Notes:  Can be refrigerated for about 5 days.
First, of all, you need to have a savory bone broth, either, made by you or store-bought.
Other variations: put shredded parmesan cheese on top, or at the end of simmering, a tablespoon of nutritional yeast.
