I know you are going to say, banana bread again?  oh yes, my dears! although there are a bunch of recipes out there that I have tested and made some of them, I only want to make it healthy, with more fiber, protein, good fats, some anti-inflammatory and antioxidants spices to enhance the health, refined sugar-free, vitamins, and minerals, it`s very savory and moist at the same time, sounds good to you? I don´t know if I have to call it bread or cake, the tiny slice leftover that I have in my fridge tastes better than yesterday.

You know that when you work with coconut flour, you need to have the right proportions so the dough does not crumble when it`s finished, so I did my variations to help it come together and I really love it. Did you see it?  is absolutely amazing! 😍

PROTEIN BANANA BREAD WITH SALTED DATE CARAMEL (Paleo, Gluten-Free, Whole30, Refined Sugar-Free)

Total Time: 1:15 h
The recipe makes 10 slices.

Instructions for the Bread:                                                                   
  1. 3/4 cup coconut flour + 1 tbsp
  2. 4 very ripped bananas
  3. 4 large eggs
  4. 1 tbsp chia seeds egg (I prepared the night before)
  5. 1 tbsp lemon juice (mixed with the mashed bananas)
  6. 4 tbsp ghee or coconut oil melted, more to grease the pan
  7. 1 tbsp brandy (optional but it`s worth it)
  8. 3/4 tsp Himalayan or sea salt
  9. 1 tsp vanilla extract
  10. 1/2 tsp baking soda
  11. 2 tsp  baking powder 
  12. 1 tsp cinnamon
  13. 1/2 tsp turmeric
  14. 1/4 tsp ground ginger                        
  15. 1 scoop collagen protein (animal or vegan)

Instructions for Salted Date Caramel Topping:
  1. 16 dates soaked in warm water for at least 30 min                              
  2. 1/4 cup warm water
  3. 2 tbsp coconut milk, more if needed
  4. 3/4 tsp beef gelatin or a vegan one
  5. 1 tsp coconut oil or ghee melted
  6. 1/4 tsp Himalayan salt (more to your liking)
  7. Pinch of cinnamon

Instructions:

Preheat oven to 350 F, line with parchment paper, and grease a bread pan 8-5 inches.

Mash the ripped bananas with a fork, then add the lemon juice and stir well. Set aside.

In a bowl beat the eggs with the seed egg, then add the rest of the wet ingredients until well mixed.

Into another bowl, throw the rest and dry ingredients, and stir well.

Mix gradually the dry ingredients into the wet, until you have a thick dough without lumps Wait between 5-10 minutes until the coconut flour absorbs the liquids.

Pour into the prepared pan and bake between 50-60 minutes, or until the toothpick inserted in the middle comes clean, it`s cracked and golden.

Take it out of the oven, and let it cool at room temperature.

How to Make a Salted Date Caramel:

Soak the dates in warm water.

Into a food processor throw the warm water you used to soak them about 1 tbsp, and add gelatin, coconut milk, salt, and oil. I recommend putting the warm water first, adding the soaked dates after that one by one a tablespoon of the coconut milk, if too thick add a teaspoon of milk until it reaches the desired consistency but it has to be thick and not dripping.

Process scraping the sides as needed, until you have a smooth texture.

Transfer to the fridge until the bread is done and cooled.

If it is too hard when you take it out of the fridge stir well until smooth,  spread it over the bread, and if you want, sprinkle salt over it, at this point you will want to take a slice, believe me, I totally understand you, but it`s better if you let it set in the fridge for about 1 hour.

Store it in an airtight container for up to one week.

Notes: When I mean very ripped bananas, they were almost black with a creamy inside texture that I put into my fridge so that they did not spoil, they are sweeter than the yellow ones.

I let here the 2 nutrition facts about the banana bread and the salted date caramel, you decide if you want it like that, or prefer to do only the bread.

1 scoop of the Collagen Protein is about 11 gr protein, divided by 10 slices = 1.1 g more of protein in one slice,  the result is 5.1 g of protein in each slice of this bread, but if you sum 1 g more provided by the salted date caramel the final result is = 6.1 g of protein in each whole slice. Although you can use vegan collagen or something similar.
