Salty-Spiced Sweet Potato Bread (Paleo, Gluten-Free, Soy-Free)  

I am not a fan of bread, but some days I want it.  Yesterday I desired to make a sweet potato bread but not too sweet, so I started with a basic and easy bread, I thought to add some herbs, spices, and flavor to it, a special bread with my lunch or my breakfast with butter, even it´s a great idea for a snack, you can see what my moist bread looks like.

 It´s super tasteful! and loaded with a good quality of gluten-free carbs, fiber, healthy fats, vitamins, minerals, and spices, that don´t are only give savor, they combine to make you feel better. I have tasted in each piece the onion, rosemary, garlic, and the sweet potato too, yum!, I will repeat for sure the recipe and will play with other ingredients. It will become one of my favorite loaves of bread.

It can be also be made on individual cupcakes molds and could freeze.

I put cheese because my son asked for it, it´s not necessary if you don´t want to.

SALTY-SPICED SWEET POTATO BREAD (PALEO, GLUTEN-FREE, SOY-FREE)

Ingredients:
  1. 1 3/4 cups of Paleo Flour (See it here ⇒ the first one)
  2. 1 cup of mashed sweet potatoes (boiled, baked, or canned)
  3. 1 teaspoon salt
  4. 1 teaspoon baking soda
  5. 1/4 teaspoon baking powder
  6. 3 large eggs
  7. 1/2 teaspoon turmeric
  8. 1/4 teaspoon ground cardamon
  9. 1/4-1/2 teaspoon crushed rosemary, fresh or dry
  10. 1/4 teaspoon ginger
  11. 1 teaspoon ground onion 
  12. 1/3 cup coconut oil, olive oil, butter, or ghee melted (I used Nutiva Coconut Oil with 
  13. butter and garlic flavors)
  14. 1/3 cup coconut, almond, or other milk
  15. 1 tablespoon coconut sugar, raw honey, or maple syrup (optional)
  16. 1/3 mixed nuts, optional (mine with pumpkin and walnuts seeds)
  17. 5-6 slices pasture-raised cheddar cheese or vegan cheese (optional)

Pre-heat oven to 350 F.

In a bowl mix the dry ingredients. Set apart.

In another bowl mix the milk, eggs, oil, and mashed sweet potatoes until well combined. 

Add this to the dry ingredients and stir well. the dough should be thick as in the picture.

Grease a loaf pan (9"x 5") and throw the mix into it, spread evenly.

Bake between 45-55 minutes, until a toothpick, comes clean. If you see that it´s becomes brown, put on top an aluminum foil, make holes in it, with the tip of a knife or a  toothpick, to let the smoke escape.

If you want, but at the top fine slices of cheese, then mixed nuts, turn your oven to broil, and wait for the cheese melts, between 5-10 minutes.

Enjoy as part of breakfast, brunch, with soups, meat, it´s your election!. 

Note: If you don´t have or want to use Nutiva Coconut Oil with non-dairy with butter and garlic flavors, it´s ok, add 1/2 teaspoon of ground garlic to the dough, or decrease the garlic and increase the onion, or other spices.
