I had never done anything with buckwheat flour or groats, I did not even know about it, but after arriving in this country have begun to hear about it, and the intrigue took over me, so I decided to buy this flour and to do something with it, the first time, trying to do something new, I did not measure correctly the ingredients, the result was a dry and crumbly bread that I had to throw it away, unfortunately, a thing that I don´t like at all. It seems that if the majority of the recipe has this flour, it tends to be quite dry, mm, what could I do to fix that? in the same way, would I add something that contains more nutrients? 😕
I was thinking about it until I said myself, let´s do it again, I was hoping that at that time might be good enough, and YES!, it was a successful recipe, super savory, moist, it keeps your full, and I want to share it with you!.
Let´s know about what is buckwheat?, the groats are hulled seeds of the plant, it´s called an ancient grain, but it´s not a grain at all, is a fruit seed, and it is not related to wheat, instead of it´s related to rhubarb plant, is gluten-free, and one of the healthiest whole grains, has a nutty intense flavor, it´s mainly a complex carb (starch and resistant starch), and it has been a staple food for thousands of years for some countries around the world, especially Asia and a small part of Europe. Is a good substitute for celiacs and gluten-related disorders, but is good for everyone too.
The Nutrition Facts of it is for example, in 1 cup you have: protein 15 g and fiber 12 g, calories 402 of which 33 are from fat, saturated fat 0.8 g, polyunsaturated 1.1 g, monounsaturated 1.1 g, sodium 13 mg, potassium 692 mg, dietary fiber 12 g, sugar 3.1 g, total carbs 85 g, calcium 3.8 %, and iron 27 %, plus has vitamins E, B6, niacin, folate, manganese, copper, phosphorus, zinc and magnesium, catechin, rutin and tannins, and 8 essential amino acids including lysine.

Instructions:
- 1/2 cup of tahini
- 3 large eggs or 4 small
- 1 1/4 cups coconut yogurt or your choice
- 1/4 cup espresso coffee
- 1/2 cup of coconut cream
- 6 tablespoons ghee, coconut oil melted, or avocado oil, more for greasing the pan
- 1/2 cup maple syrup or honey
- 1 1/2 teaspoons of vanilla extract
- 1 cup of buckwheat flour
- 1 teaspoon of cinnamon
- 1/2 cup of cacao powder
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/2 teaspoon sea salt or Himalayan salt
- 2 scoop of pasture-raised collagen peptides
- 1 cup unsweetened dark chocolate chips
- Dark chocolate stevia syrup (optional, I used NuStevia)
Pre-heat oven at 350 F.
Grease the bread pan, you can use 9x5 or 10x5 inch, because is a big bread.
Into a bowl, mix the first 8 liquid ingredients, start whisking the eggs.
In another bowl, the other dry ingredients, except the chocolate chips and the syrup is used.
Pour the dry ingredients gradually into the liquid mixture until a thick and smooth batter is made.
Fold in the chocolate chips.
Transfer the batter to a greased bread pan and bake it for around 1 hour, or until a toothpick inserted in the center comes clean.
As soon as you take it out of the oven if you want more chocolate flavor like me, pour it over stevia chocolate syrup, the quantity is to your liking, it will absorb it, or chocolate melted chips.

Let it cool for about 30 minutes if you will do it in a bread tin, and around 10 minutes if you do in cupcakes molds.
Enjoy as a dessert, snack, brunch, or breakfast!
Notes:
Feel free to replace the tahini with others seeds or nut kinds of butter.
Instead of the bread pan, do it in the cupcake molds.
It can be left in an airtight container in the fridge for 10 days more or less.
This recipe makes around 12 big slices of bread or, around 12 cupcakes.
