The other day I made these paleo brownies, but they were busy and long days, and almost we did not eat there in the week, the brownies were staying in the fridge, suddenly I thought, what could I do with them? I did not want to throw them in the trash, not even that goes through my mind.

I was taught by my parents how to look for solutions before throwing anything like food, clothes, furniture, etc. This advice is always appreciated by me, and I pass it on to all my family members and the people I know. The easiest thing is to throw away something that we think no longer serves us, the hardest thing is to use the mind to devise and create new things with that, or to give it to a person that really needs it. Thinking a better way to transform it, we can take advantage of what we have already bought, and it is also a good way to save money or give it away to help someone that you never will know how much could it represent for that person, and you will be glad you did it! fair enough? 

Right away, as in the cartoon, the magic bulb turned on and illuminated my mind, ha, ha, Yes!, I would make something easy, that does not need to be baked and be healthy and savory so, I started immediately.  I am very happy that they did not last more than two days, as you see I took advantage of what apparently should be discarded.

So let´s do it!

Time to Preparation: 7-10 min
Time to Fill them: 10 min
Total Time: 20 min
The recipe makes 12 cups

Ingredients:                                                                        
  1. 12 Brownies see the recipe.
  2. 2 tablespoons of virgin coconut oil melted, add more if is needed
  3. 12 oz container of roasted cashew butter or another nut or seed butter without salt
  4. 12 liners cups or more, depends on the size you will make them

Instructions:

Throw the brownies in the food processor with the melted coconut oil and blend them until dough is made.

Prepare the cupcakes molds cups with liners.

Scope a portion of each cups.

With your clean fingers, spread, and push the dough into each cup.

Once finish this step, harden them in the fridge for about 20-30 minutes.

Warm a pot with enough hot water and take the glass jar of cashew butter inside it until it melts.

Take a spoon and put the desired quantity of butter inside each cup, around 1 or 2, depends on the size of the cupcakes molds.

Bring them to the fridge until firm.

Enjoy as a snack or dessert!

Note: My small cupcakes mold it´s broken and I did them in the normal molds, but you can choose to make them in the shape that you like,  balls, small cups, chocolate molds or anything you want to, also they can be filled with any nut butter, coconut butter, ice cream, chia pudding, etc. Imagination has no limits.

Please, do not make the mistake of not putting paper liners, I forgot them completely and I spent a lot of time to get them out, that´s why they were not pretty, but very tasty.
