Flourless Cacao-Avocado Brownies with Creamy Mango-Cheese Top (Paleo,Gluten-Free)

Do you know that the Registrar at National Day Calendar proclaimed National Avocado Day to be celebrated annually beginning in 2017?

We all know that avocados are really good fruit, they are considered a superfood, full of healthy fats, vitamins, and minerals, they can be use fresh or cook with them salty or sweet dishes.

The last bag I bought from Sam´s Club was spoiled, even I always buy green and wait in my home so they are mature, but I tried to save the pieces that weren´t rotten with a spoon and put them in an airtight container with lemon juice in the freezer to make this recipe.

They are very easy to do by the way, flourless, and with a pleasant taste, you don´t feel uncomfortable to indulge your palate with them.

I did not have ice-cream, so I decided to do a cream with mango and cream cheese, this step is completely optional, the brownies for themselves are very rich, but I can say that it´s worth doing it, but it´s up to you.

FLOURLESS CACAO-AVOCADO BROWNIES WITH CREAMY MANGO-CHEESE TOP (Paleo, Gluten-Free)

The recipe makes 8 brownies




Ingredients for Brownies:
  1. 3/4 cup of mashed avocado                                           
  2. 1 cup of cacao powder
  3. 1 cup of coconut sugar or other sweeteners
  4. 5 organic eggs
  5. 1/4 teaspoon salt
  6. 1/2 teaspoon of cinnamon
  7. 2 teaspoons of vanilla extract
  8. 2 tablespoons of lemon juice
  9. 1/2 teaspoon of baking powder
    Ingredients for the Mango-Cream Cheese Cream:

    1. 1 medium raw mango
    2. 4 oz creamy vegan cheese like cashew cheese
    3. 2 tablespoons of honey, maple syrup or any sweetener you like 
    Instructions:

    Pre-heat the oven at 350 F.

    Grease a bread pan 8X5 inch and liner it with parchment paper. Set aside.

    Into a food processor throw the first 8 ingredients until they are well blended.

    Then, add the baking powder and pulse a few seconds to incorporate it.

    Pour into the bread pan, tapping to fill and distribute the dough well.

    Bake it between 25-35 minutes, depends on your oven temperature.

    Let it cool to cut on the desired shape.

    Meanwhile, you bake the brownies prepare the cream.

    Peel and chop the mango and put it in the food processor with honey and the vegan cream cheese. Blend them until smooth.

    Set aside in the fridge.

    When the brownies are cold, spoon the cream over them.

    Enjoy!

    Note: This recipe can be made without the cream of mango and cheese, and it will be a good brownie also.
