Today is an important day for the family, is the 5th Birthday of my granddaughter!. I live in Lincoln, Nebraska but I am in San Antonio, Texas, to celebrate with her, my daughter, and her husband. They are going to buy a birthday cake for her that she likes, and I decided to make this bread that they love, and I want to share it with you also. 

When I started to taste this kind of bread, I became addicted to it, more than the other we are used to eating. You have to realize that it´s not the same taste if you take a slice of it, compared with a loaf of wheat bread, you can´t pretend that the texture could be similar either, but you can feel all the wonderful savors in it and it´s light on your stomach, it´s free of grains, is paleo-friendly, has a lot of proteins, good oils, vitamins, a bunch of fibers, and better carbohydrates that going to fuel your body and nourishes it.

The original recipe I found on the Dish by Dish blog, I think it was that I liked it most of all, so, I started to make it without any fruit in it and you can do the same if you prefer. It´s not sweet bread, you can put on the top butter, jam, or anything you prefer. I wanted to try it to make my variations. I love mango, pears, and figs as you see in my blog picture; by the way, you can change the fruit to what you like more. It´s good for breakfast or a snack, you and your children will love it, accompanied by milk, tea or coffee, hmm, I love coffee, do you?.

I was concerned because when you add raw fruits, the juice in them can change the composition of this bread, I did not know what could happen, but the result was irresistible and amazing indeed!.

Easy recipe to make, you don't have to have any complicated appliances and you can do it in batches and freeze in advance or wrapped in plastic in the refrigerator or freeze it.

I want to say to you so that you can have all the benefits of this bread, that I only used organic ingredients. I know they are more expensive, but they are worth it and you will improve your health.

 HEALTHY ALMOND COCONUT BREAD WITH MANGO, FIGS, AND PEARS (Paleo, Gluten-Free, Grain-Free, Whole30)

Preparation Time:10 min                                                 
Baking Time: 60 min   
Total time: 1:10 hours                                                                                    The recipe makes 10-12 slices   


Ingredients:                                                                                         
1   3/4 Cups of Coconut Flour
2   1 Cup of Almond Flour
 3/4 teaspoon of Salt
 1 1/2 teaspoon of Baking Powder
 3/4 cups melted butter, ghee, or coconut oil (more for greasing
      the pan)
6   8 Eggs
7   2 tablespoonfuls of honey, maple syrup, or another sugar substitute  
8   1 1/2 teaspoons of Apple Cider Vinegar
 1/2 Cup of diced Figs, Dates, or raisins (to your liking)
10  1 Cup of diced Mango (mine was very ripped)
11  1 Cup of  diced pears
12  1/2 teaspoons of grounded cinnamon (optional)
13  1 teaspoon of vanilla extract  (optional)
14  1/2 Cup of cut Walnuts (optional)


Directions:                       
                                            
Preheat the oven to 300 °F.

Melt the butter in the microwave or in a saucepan at low temperature, let it cool, then stir in honey and cider vinegar, and set aside.

Beat eggs in a large bowl, add salt, vanilla extract, and the mixed butter, and continue beating until well mixed.

Then mix the dry ingredients: baking powder, ground cinnamon,  almond flour, and coconut flour, stir, and don´t leave any lumps in it.

Stir well into the wet ingredients until they are well mixed. Incorporate diced mango and pears. Let batter sit for 5 minutes.


Pour it into a buttered loaf pan and place the chopped walnuts on the top.

Bake for around 50 - 60 minutes, depending on your oven, or until a toothpick inserted in the center comes clean.

Allows bread to cool for about 30 minutes - 1 hour. Remove it with a knife or spatula around the edges and take it out from the pan. Enjoy it!

Notes: Who those that are in Whole30, leave out the honey or maple syrup, also the dates, it tastes good without them.

You can leave the fruits, nuts, vanilla, cinnamon, and honey out so that you can enjoy it every day with butter, mashed avocado, or anything that you like, it can be used too as a sandwich bread.
