Let`s talk about this super... delicious Butternut Squash Flan 💗 did you see the picture? OMG! you won`t believe how easy is to do it, it could be a part of the menu of your table, anddd..... they will ask you for more so be prepared 😄

Flavorful, healthy, protein-packed, naturally gluten-free, paleo, dairy-free, refined sugar-free, so tell me about the beautiful contrast between the yellowish color with the brightness of this chocolate-orange caramel running everywhere? mmm.....I did it with dark chocolate chips, fresh orange juice, and honey, yeap friends, I did not have any coconut syrup, and I did not like to make the caramel with coconut sugar so honey for the rescue, I always try to think out of the box to resolve a problem, it was tricky enough but I did it. 

My mom used to make one that was so good! but she used corn starch in it, it was like a pudding with caramel, I did not want that so I changed almost all her recipes to make this one that I prefer for its smoothness, protein content and why not say it is a real flan.

You know that the combination of butternut or pumpkin with orange is perfect, first I thought to put the orange flavor inside the flan, but then I changed my opinion and decided to add it to the caramel, I have a friend who passed by yesterday, he ate the last piece of the flan I had, he even did not want me to put it on the plate, he took all the container with the rest of the chocolate caramel on the bottom and asked me to do it again, and said me please,  wouldn't you forget to call me? that pleased me very much because I love everyone I give my food like it, so not only my family like it, I need to do another one right away for sure.

This recipe can be made with canned pumpkin, freshly boiled or baked pumpkin, or another one. The base of it it`s the normal flan recipe you will add 14 oz of the puree, I did it with 1 full-fat can of coconut milk, the recipe of coconut condensed milk I have been doing each time I do flan is easy to change for any sweetener you have on hand, and you can find it in this post,  you can change the honey for any sweetener that Keto diet permits, and to make or to buy keto caramel as well, only you need to watch for the serving portion but if you don`t have any preference to do it with dairy or sugar you need to grab 1 can of condensed milk and 1 can of evaporated milk, 5 eggs more the butternut or pumpkin, and you are ready to go.

As you see the recipe is very adaptable, I am trying to give you options for your needs and taste. The caramel is so flavorful, I used Lily´s dark chocolate chips, and these mixed with the honey caramel and the orange juice are so rich, maybe someone could say that it`s overly sweet, this clarification is only for you to know because I do not know how your taste buds are? but if you are not an overly sweet person like me try to change any dark-sweetened chocolate chips for unsweetened ones, like the chocolate bar for baking that does not have any sugar in it, it`s you prefer only caramel what is stopping you? nothing right?  And it`s so rich as this one that I just changed it because the chocolate and orange are a perfect addition to it and I love dark chocolate perfumed with orange juice, do you? 😋 Scroll down to the end to see the Pumpkin Flan with Coconut Syrup Caramel.

We going to gather with my son and his spouse on Christmas, and plan to go to San Antonio, Texas to spend quality time with my daughter and granddaughter there until next year, I am very excited to see my family indeed.



BUTTERNUT SQUASH FLAN WITH CHOCOLATE-ORANGE-CARAMEL (Paleo, Dairy-Free, Refined Sugar-Free)

                                                                                                                                     





Preparation Time: 20 min (more if you bake the pumpkin)
Baking Time: 50 min
Total Time: 1:10 h
(without the cooling time)
The recipes make 10 servings


Ingredients Butternut Squash Flan:

1 full-fat can of coconut milk
3/4 cup (14 oz) coconut condensed milk
1 3/4 cup (14 oz) butternut squash or pumpkin puree
5 large eggs
1/2 tsp cinnamon or pumpkin spice, add more to your liking
1/4 tsp salt
1 tsp vanilla extract 
1 tsp gelatin (optional)

Ingredients Chocolate-Orange-Caramel:

1 cup honey or coconut syrup
1/4 cup fresh-squeezed orange juice
1 strip of orange peel
1/3 cup unsweetened dark chocolate chips or chunks for a bar


How to do the Chocolate-Orange-Caramel:

Into a small pot add the honey with the strip of the orange peel, and boil it on medium-low heat until it starts to darken and thicken, add the orange juice, let simmer for around 6 minutes, take it off of the heat and add the chocolate chips or small chunks, let the melt.

Once they are melted pass the chocolate caramel inside an 8-inch pan. Let the caramel set at room temperature, then put it into the fridge to cool out.

It will cool but don`t expect it will be as solid as the caramel is.

How to Make Butternut Squash Flan collage (Paleo, Dairy-Free, Refined Sugar-Free)



Preheat oven to 350 F. On the last rack over the bottom, add a wide pan with 1 1/2 inches of water.

Into a blender add all the ingredients till well dissolved, and smooth.

Pour over the cooled chocolate-orange-caramel with the help of a spoon in the middle between the milk and the caramel, what I warn you here is that don`t let it pour directly on the caramel because it will make holes in it, so take a spoon and let it flows over it, so it is distributed without using any force on the caramel, got it? 

Transfer it to the oven on the hotter water pan. Bake it for around 45 minutes, add more hot water if necessary, around 30-35 you will see it starts to darken so take a piece of parchment paper with holes or a foil and put it on to finish, there is another way to do it but I do not like it, anyways I let you know, is to put the paper on before it starts to bake till it`s finished but do anything that has you feel comfortable.

Take it to a cooling rack until it`s cool enough, invert it into a serving plate, and transfer it to the fridge. Cool for at least 4-5 hours, better overnight.
