Hey friends! how are you doing? I have been busy, I haven`t posted for a while, I was in training at work and I have another one coming, more the usually I have to do daily, so I arrive home tired.
I did not put any picture of my turkey, to be sincere, I left it in the marinade more times than usual I do and was incredibly moist and flavorful but the legs were separated even when I tied them 😟 as you see nothing and none one is perfect, but this is the best part, it does not matter if you are cooking something for years and you try to improve a recipe, there is a day that something goes unusually, the result is that you have to enjoy the moment, no matter what happens, so I finished separating the legs, the whole breast was cut in steaks, I can tell you that it was unbearable, I wish you could taste it, my family was happy! and did I 😉
Some people have asked me to do an easy no-bake pumpkin pie, so this idea came to me and it`s so amazing that I can`t wait to share it with you. In less than 30 minutes you have it inside the fridge to cool out, I left it for about 5 hours to set it up to let the flavors meld and develop, and believe me it`s like a flan with a melty-chocolate-hazelnut crust that tastes like a Nutella and combined pretty good with it, you won`t need anything else for sure, or maybe a cup of hot chocolate or coffee will do the rest work 😋 what do you think?
Additionally, I did not put the pumpkin pie spice because I love the taste of the pumpkin itself with cinnamon and a pinch of nutmeg, do you? and sometimes your taste buds only feel the spices instead of the flavor of the pumpkin. Don`t get me wrong, I like that combination but I sometimes think it`s too much for me, but you can do what keeps your boat floating, then I added vanilla extract, yummy!!! 😍
I love this easy and tasteful recipe you can do for Christmas, new year, or the day that you want! also, you don`t have to feel guilty at all, 7 g protein for a slice, low in carbs, refined sugar-free, gluten-free, full of vitamins, minerals, and fiber, and can be adapted to any kind of diet, also, the children 🧒 will love it!
Anddd... another great thing is if you want to do bars instead of a pie, feel free to put it into a square or rectangular lined pan with parchment paper, no more than 8 inches, and let it set enough to cut in bars.
Keto eaters, substitute the honey or maple for any keto syrup and you are set to go, I will let below the Nutrition Facts replacing the honey for a monk or another keto sweetener.
Vegan eaters can make a replacement for agar-agar instead of gelatin, and everybody wins, right?
I remember my mom and my grandma making pudding at home, so as you can see it takes minutes to do it.

PALEO NO-BAKE PUMPKIN PIE WITH CHOCOLATE HAZELNUT CRUST
Preparation Time: 10-15 min
Cook Time: 10 min or less
Total Time: 20 min The recipe makes 8-10 slices
Ingredients Crust:
Lined a spring pan with parchment paper on the bottom and sides. Set aside.
In a medium bowl, throw the flour with the cinnamon and salt and mix it well together.
Add the coconut oil/ghee melted and the honey.
Stir everything until you have a dough formed.
Transfer to the pan a spread evenly with your hands until the edges of the pan are. Take it to the fridge while you are making the filling.
Ingredients Pumpkin Filling:
Beat the eggs.
Bloom the gelatin in 2 tbsp of water.
In a pot, mix everything together, except the vanilla.
Take it to the burner at medium temperature, and stir it constantly until a thick pudding is made. Stir in vanilla and take it out of the burner.
I did not have that issue, but if you see it is not homogenous (a friend told me) pass it to the blender for a few seconds, and it will be perfect.
Put the pumpkin filling on the pie crust, and let it sit in the fridge for about 5 hours or overnight. I put some ground hazelnut on, but you can omit or put another nut on.
Unmold, cut it, and enjoy it! 💓

- 1/4 + 1 tbsp cacao powder
- 1/4 cup honey, maple, coconut syrup, or another unsweetened syrup
- 1/4 cup coconut oil or ghee melted

- 1/4 tsp cinnamon
- 1/4 tsp ginger
