This cashew-coconut pie crust is too good to be true!  😋I can only say that tastes 
A M A Z I N G! does not get soft into the fridge, and I think you will love it as I do not only for chocolate pie it could be a perfect one for any kind of pie you will make sweet or tasty only take it out the vanilla and sweetener, and increment the salt to 3/4-1 teaspoon, add if you want to any seasoning how it sounds? awesome right?

There are a bunch of recipes of Paleo, Keto, Gluten-Free, Sugar-Free pie dough so I decided to give it a try, this is one is a little different but gave me a perfect combination for a toasted pie, thing that I love it!, even the cookies I like toasted instead of soft, imagine this crust in my Guacamole Taco Pie with shrimps mmmm...I am thinking while I am writing to you and I`m drooling over here, for sure I will do it, would you?

I am happy to be back again with you first, at all, I haven`t felt well for about a month, my thyroid is not working very well, and it seems that anything I have been doing has not worked as it should be, I think I need another doctor as well besides of this I have been in training at work, and you know how works your daily work gets behind and when you finish the training you have to run to finish what cannot be left for tomorrow, my other and important concern is that my mom turned the July 29th  92 years and as you know because the COVID-19 I can`t go to my country to see her, I miss her every day of my life but the worst thing is that even she is healthy now she is getting older each time that the clock is ticking, and I don`t want to think about I won`t be there when she will get sick, it`s so sad, and it makes me feel bad but I have to think positively because I can`t do anything right now. 

Let`s talk about this pie, this is what you and I are here right?  I was wondering about the result the first time I made it, and I had an issue with the crust, you will need to put weight on to prevent that the crust creates imperfections because it will rise to make bubbles, it will still taste spectacular but it will not be smooth and perfect.as it should be so I learned from this and this second time was an all a success!!! it`s so easy to do, grab the food processor, throw cashews, sweetener, and coconut flakes, pulse until they are fine, add eggs, vanilla, ghee,  and lastly add the coconut flour.

It`s a wonderful combination of a healthy dessert in one slice on a toasted and savory crust, decadent, smooth filling, tasteful,  do you believe it? yes, am hooked with it 😍 that I cannot wait to share this recipe with you.

You can change the ingredients of the filling if you don`t have all in hands, for example, substitute the 1/4 of chocolate chips for cacao/cocoa powder it will be 3/4 cups of cacao/cocoa, or if you don`t have cacao powder add 1/2 cup of dark unsweetened chocolate chips or bar (chopped) and taste it to decrease the sweetener, you will have that will have a la little less filling but it will still taste superrrrr, even you can leave out the gelatin but I try to incorporate it in almost anything I do because it`s healthy, fixes the gut, is good for skin, tendons, muscles, bones, adds protein and consistency when it`s used right.

Keto eaters don`t be afraid of cashews nuts, of course I know they have more carbs than others nuts but they have more health benefits than the number of carbs, so try to eat them measuredly, this Nutrition Fact is divided into 8 servings, you don`t have to eat a big slice, cut the pie in10-12 slices and you will be fine, see the article of Perfect Keto to see what I am talking about. I did it with granulated and syrup of monk fruit sweetener but you can change it for your preferred one.

The Recipe Makes: 8-10 slices
Preparation Time: 10 min
Baking Time: 25 min
Total Time: 35 min


Ingredients:

Crust:
  1. 1 cup raw cashews soaked overnight
  2. 1 cup dry coconut flakes
  3. 5 tbsp coconut flour
  4. 2 eggs
  5. 1/4 tsp salt
  6. 1-2 tbsp monk fruit sweetener or coconut, date, maple sugar or another one 
  7. 1 tsp vanilla extract (optional)
  8. 1 tbsp ghee/butter or coconut oil melted
Dark Chocolate Filling:
  1. 1 can coconut cream
  2. 1/4 cup monk fruit sweetener syrup for Keto or honey, maple, date syrup for Paleo 
  3. 1/4 tsp salt
  4. 1/4 tsp cinnamon
  5. 1 tsp vanilla extract
  6. 1/2 cup cacao powder
  7. 1/4 cup dark  unsweetened chocolate chips melted
  8. 1/2 tsp gelatin (optional but recommended)

How to make the Dark Chocolate Pie?

Soak the raw cashews overnight in a pot or bowl with plenty of water.

Drain and wash them, then dry them with a clean towel.

Throw them in a food processor or a high power blender, blend them scrapping the sides as needed until butter is made, or as I did put together the coconut flakes with the cashews and the monk fruit sweetener and blend, then add the eggs and blend them until smooth, lastly the coconut flour.

Add the eggs, sweetener, vanilla, and blend again until smooth.

Or once the cashew butter is made throw the unsweetened coconut flakes blending everything until everything is well incorporated and the coconut flakes is broken into very tiny pieces, then blend it in coconut flour until a dough is formed in one side of the food processor, let it rest for 4-5 minutes.

Transfer to an 8.5 inch light greased pan, the bottom only, and distribute it evenly with your hands, then if you want the bottom smooth press it with a wide bowl or put it between 2 pieces of plastic wrap or parchment paper using a rolling pin spread it, transfer to the pie pan, don`t worry if it breaks because is easy to smooth it again with your fingers, add the weight distributing it on the bottom, put a pie shield to prevent any burns, did you see mine? it was not burned and tasted like heaven but the edges got darker because I forgot to put the shield on.

Bake it at 350  around 18-20 minutes, then take out the weights and bake it an additional 5-8 minutes, keep an eye on it, the baking time depends on your oven.

Take it out of the oven and let it be completely cool at room temperature for at least one hour before adding the filling.

Filling:

Melt the chocolate chips on a small double boiler with a part of coconut milk and cacao powder or melt them into the microwave.

Or add the melted chocolate chips in a blender with all the ingredients until smooth.

Pour over the cooled crust, and take it to the fridge for about 4 hours until set and cool.

Enjoy it as is or with whipped coconut cream or/and fruits!

Notes: I did not try it the store-bought cashew butter.

I will be perfectly fine in the fridge for one week in an airtight container.
