Happy 5th of July everyone!!!! 

Alright!, there we go again with a new awesome, tasteful, and different pie recipe because I love any kind of pie, and... this one it`s spectacular! savory and everything is in one slice, so if you are in a hurry you will say to yourself, hey! wait, sit down and enjoy this delicacy ha, ha, 
as we say in my country, this does not happen twice 😁 but also, it`s perfect for taking a slice in the summer warm night with a Margarita on hand or as you can see in my picture made it in individual molds for a party? you name it and I hear you... 😉

I wish you could taste this Taco Pie because the combination of flavors is a bomb! is filling, fresh, healthy, packed with minerals, vitamins, it has some of the best plant-based fats from avocados, coconut, and almonds, 9 g of fiber, and 25 g of protein in one slice, pretty amazing! If you think I am exaggerating just do it and let me know, fair?

I know that the majority of the avocado pies recipes are for dessert, but I am not a normal person 😂 and I love guacamole, do you? so I wanted to recreate something like that. You should know that guacamole with ground beef and also, shrimps pairs perfectly mm... so, why we don`t include a toasted and crunchy crust instead of tortillas or chips? and we are taking it to a high level? sounds good right?

Well, I had leftovers of cooked ground beef about a cup or so, I did not measure it but was enough to spread on the almond flour crust (you can leave it out or add about a pound of any cooked meat,  letting the shrimps out or vice-versa) then I made the guacamole with 3 avocados and about 10-15 halved cherry tomatoes, a medium chopped red onion, 2 large garlic minced, red pepper flakes, pink salt, black pepper, 1/4 tsp cayenne pepper (or jalapeño is you like it) lemon juice to taste, and a combination of parsley and cilantro leaves, I transfer to the fridge covered while the baked pie was cooling, then I fried the shrimps with salt, black pepper, ginger, garlic, smoked paprika in 2 tablespoons of ghee, and finish my pie with them and added more torn leaves voilà ready to eat right away! 

You won`t stop eating it! seriously, a friend of mine said to me: Woo! is an interesting recipe that tastes so good,  I don`t know how you can create those recipes? the combinations have been seen and tested by many but putting them all together is amazing!  and nobody really does them the way you do it! I really don`t know either how they come to my mind at that moment, and...she left with a piece of the pie in her hands after eating one piece here for her family to try so I wonder if she was flattering me for that 😅 what do you think?

Anyway, that is what friends are for, then she called me and said that everyone in her house went crazy with it, and they want the recipe, do you know what? I am so pleased to offer through my food light, life, and music as well, seeing the people gathered enjoying it because the food means that, sharing and talking with others, like the flavors and then the benefits it brings us, and it worked great!!! 


GUACAMOLE TACO PIE (PALEO, WHOLE30, KETO)

Baking Time: 14 min
Total Time: 34 min
The recipe makes 8-10 slices


Ingredients:

Almond Flour Crust by www.wholesomeyum.com 
adapted by me
  1. 2 1/2 cups of almond flour
  2. 1/2 tsp salt
  3. 1 tbsp monk fruit sweetener or another (optional)
  4. 1/4-1/2 tsp garlic powder
  5. 1/4 cup coconut oil or ghee, butter solid (measure first, then melt it)  
  6. 1 large egg
How to Make the Almond Crust?

Preheat oven to 350 F. Grease the bottom of a 9-inch pie pan.

In a food processor add the almond flour, salt, garlic powder, pulse it to combine them.

Stir in the melted ghee and beaten egg until the dough is made.

Transfer it to a pie pan and press it on the bottom and edges up, prick the bottom with a fork to prevent bubbling.

Bake between 12-14 minutes until golden brown.

Cool it before putting the filling.

Ingredients Guacamole:
  1. 3 avocados peeled and pitted 
  2. 12 cherry tomatoes chopped divided
  3. 1/4 cup chopped or torn cilantro and parsley leaves
  4. 1 medium chopped red onion (about 1/2 cup)
  5. 2 large minced garlic cloves
  6. 1/4 cup lemon juice about 2 large (add more or less to your liking)
  7. 1/4-1/2 tsp red pepper flakes or more to taste
  8. 1/4 tsp cayenne pepper (optional or chopped jalapeño pepper to your liking)
  9. salt and black pepper to taste
How to Make Guacamole?

On a wide plate add the avocados mash them with a fork until smooth, add the other ingredients except for cilantro, parsley leaves, and half of the chopped tomatoes for decoration but is optional. Transfer it to the fridge covered while the pie crust is cooling.

Sauteè Shrimps:
  1. 1 pound of shrimps tawed, clean, and deveined
  2. 2 minced garlic cloves
  3. 1/4 + a pinch of salt
  4. 1/4 tsp black pepper
  5. 1/4 tsp ginger or use 1/2 tsp fresh
  6. 1/2 tsp smoked paprika
  7. 2 tbsp ghee, coconut oil, or butter
How to Sauteè the Shrimps?

In a bowl add the shrimps with the seasonings stir to cover them.

In a skillet at medium-high temperature throw the ghee when hot add the shrimps. Cook without disturbing them between 2 2 1/2 minutes (depending on the size of them) then turn over and cook for the same time. Let them cool at room temperature to put on the guacamole.

Assembling the Pie:

On a cooled pie crust spread the ground beef if using on the bottom, then add the guacamole on, spreading and smoothly,  lastly add the room temperature shrimps accommodating one near another.

Decorate with more torn parsley, and cilantro leaves, and enjoy! 

Notes:

You can leave out all the meats if you don`t want to, or add only your preferred one, like carnitas, chicken, etc.

The leftovers can be kept in an airtight container until the next day, no more than that.

If you want to make it completely vegan instead of the egg the pie crust has, add 2 tablespoons more of coconut oil or vegan butter, and omit all the meats.

You can blend the guacamole ingredients all together, I just prefer this pie like artisan-made or a rustic one, with the pieces or everything there.

If You want to make it in small pies for a party or because there are not many people to eat it, and you are afraid that it will spoil, halved the recipe, prepare individual molds such as muffins or cupcakes pans as you can see in these pictures and that's it.
