This pie is so delicious! you won`t believe how easy it is to do it, it`s very customizable even you could do it with leftovers of ground beef, pork, chicken, turkey, ham, shrimps, fish, or veggies into individual molds. 😍

The ground beef one can be prepare before, the cauliflower rice is done in a few minutes, and the ripe plantains in about 5-7 minutes they are fried at medium temperature, the ground beef it`s easy also, then assembling the pie, prepare a good green salad as a side dish and that`s all, healthy, nutritious, and super tasty.

I have been doing this pie but with mashed ripe plantains and I love it! do you? but never as I did today, and at least for me, it`s better than the mashed one.

The food is not boring at all if you have some imagination to change the way to do it or searching for a good recipe instead of right? I don`t blame anyone because I don`t have an imagination for other things. Simply, you don`t need to repeat the same food for some days if you don`t want to. 

I like to program what to eat during the week as meal preparation. If I do for example 2 pounds of ground beef or turkey I should figure out how to use it in a week, sometimes with rice, other into a pie, or any idea that occurs to me at the moment, you should already know how I am, sometimes I have no idea and sometimes I have like 5, 😀 and I don`t know which one will work better ha, ha. You can be good at many things but not at all of them, if not people would not search for recipes on the internet (this is an example because we are talking about food now) other people think they know everything and that is not real, most likely what you are good at I'm not and vice-versa name it and I'll tell you.

So let's go to make this tasty pie, and do not try to deviate me from the topic at hand 😂


RIPE PLANTAIN PIE WITH CAULIFLOWER RICE AND GROUND BEEF (Paleo, Whole30, Gluten-Free)

Assembling Time: 10 min
Total Time: 50 min
The recipe makes 8 servings.



Ingredients:
  1. 3 large ripe plantains 
  2. 1 1/2 pound of cauliflower rice (mine was frozen)
  3. 1 pound of ground beef, another meat  (thawed), or veggies
  4. 1 cup of tomato marinade
  5. 4 minced garlic cloves separated (3 for the beef, 2 for the rice)
  6. 1 medium onion sliced
  7. Half red bell pepper sliced
  8. 1 tsp salt, more for the rice
  9. 1/2 tsp oregano
  10. 1/2 tsp Italian seasoning
  11. 1/4 tsp cumin
  12. 1/4 tsp cinnamon (optional)
  13. 1/4 tsp red pepper flakes (adjust to your liking or leave it out)
  14. 1/2 tsp smoked paprika
  15. 3 tbsp parsley chopped
  16. black pepper to taste
  17. 2 tbsp capers (optional)
  18. 2 tbsp coconut or avocado oil for the ground beef
  19. 3 tbsp ghee for the rice
  20. 1/4 cup cashews for decoration (optional)
  21. 3-4 mint leaves torn for decoration (optional)

How to make fried plantains?

Take off the skin of the plantains and cut them in half lengthwise.

Fry them with 2 tablespoons of oil at medium heat until golden brown.

Pass them to a kitchen paper to absorb the grease, but when still they are hot transfer to a pie plate, accommodate and spread them on the bottom of it.

How to make ground beef:

Sliced the onion, and mince the garlic separating it.

In a skillet throw 2 tablespoons of coconut oil at medium temperature, add the onion slices until translucid, then add the minced garlic until fragrant. Throw the ground beef,  mix it and cook it with salt, black pepper, and seasonings, and parsley leaves, then add the tomato sauce and finish to cook it thoroughly, for about 10-12 minutes, taste it,  put a lid, keep it warm, and set it apart.

How to make cauliflower rice?

In another skillet add the butter over medium heat until hot, add the minced garlic until fragrant.

Thow the frozen cauliflower rice breaking the big clusters with your hands first, and raise the temperature at medium-high stirring it, add about 1/2 tsp salt and pepper, and continue cooking it for about 4-5 minutes until all the water is evaporated, and it is cooked through, I think this is the perfect texture like rice is but if you like, cook it longer. Take it out off the stove, taste it, and add more salt and pepper to your liking. Set it apart but don`t put a lid on, better transfer it to the oven to keep it warm.

Assembling the Pie:

Over the plantain kind of crust put the cauliflower rice until the edges of the pie plate, then with your clean hands or a wide spatula push it down a little distributing it, then add the ground beef pushing it too a little trying to make the surface as smooth as possible.

Decorate with torn mint leaves and cashews if using, but recommended.

Enjoy it!  because it is a super delicious combination with anything you can put on 😋

Notes: if you encounter that everything is cool before assembling, heat them separately, or take the whole pie to the oven for a few minutes to heat it up.

If you will do it in small cups or molds, calculate the size and cut the plantain according to them.

Don`t let the ground beef or anything that you want to put on the rice too liquid or dryer, the sauce should be thick to stay on the meat but to drip some on the rice.
