It´s been a while since I made a rice lasagna, in my country when you have all things that are necessary to do it, we called "Imperial Rice", it´s made with mayonnaise, cheese, the rice is cooked first with tomato salsa, and a savory shredded chicken usually, but you can make it also with any meat, fish or seafood available.

This time I prefer to change the recipe, and although I always make my own healthy mayo, I want to include instead of it avocados, I made the spiced turmeric rice the day before, to change the composition in the rice for resistant starch, and the cheese is cheddar pasture-raised, but if you are vegan, or you can´t eat dairy, change it for a vegan cheese.

Do you know how to enhance the resistant starch in white rice?

Cooking it with coconut oil or vinegar, and then take it to the fridge for several hours even days.

Researchers have found that this is the best way to consume a simple carbohydrate food to transform it into a type of fiber that is the resistant starch. The same results when you cook potatoes, pasta, sweet potatoes, oats, legumes, green banana or plantain, and yuca/cassava among others, you take them to the fridge, they will become in resistant starch that makes enormous favorable actions to our body, see this post.

Of course, you have to reheat it, but this process doesn´t change the composition that it´s made before, so try to do it out, cut the carbs and calories and add overall gut health, that is the cause of the majority illness we have right now, everything starts in our gut.






Seriously, the recipe is awesome 🎇I bet that you ca n´t stop to do it, does not matter what kind of meat you will use into it, the combination of all flavors are super!  it´s a complete and comfort meal,  full of protein, organic: healthy fats, carbs, minerals, vitamins, and spices that enhance your health. 

Of course, you can change the rice or the shrimps for anything else that keeps your boat afloat.

RICE LASAGNA WITH SHRIMPS AND MASHED AVOCADOS.

Ingredients:

  1. 2 pounds of fresh shrimps tawed and cleaned
  2. 4 medium avocados
  3. 2 cups of basmati white rice
  4. 1 full tablespoon of turmeric
  5. 1 teaspoon of oregano
  6. 1/2 teaspoon of Italian seasoning
  7. 1/3 cup of fresh lemon juice
  8. 1 teaspoon of mint leaves chopped or dried
  9. 1 large onion sliced
  10. 4 large garlic cloves minced
  11. 2 tablespoons of virgin coconut oil more for greasing the mold
  12. 1/3 cup of ghee or butter
  13. 1 teaspoon of onion powder
  14. 1/2 teaspoon of garlic powder
  15. 1/2 teaspoon of ginger ground
  16. salt to taste
  17. black pepper to taste (optional)
  18. 1 teaspoon of onion powder
  19. 1/2 teaspoon of garlic
  20. fresh parsley, chives or cilantro minced for decoration
  21. Reduction of balsamic vinegar for garnish





Instructions:

Earlier wash the rice several times, and cook according to the package instructions with salt, coconut oil, turmeric, onion, and garlic powder, Himalayan or sea salt to taste, and black pepper. Let the rice to room temperature or cook it the day before, put in your fridge and let stand over the counter until it reaches room temperature, add 1/4 cup of hot water and stir well.

Into a pot or skillet on medium temperature, put the ghee with the sliced onion until translucid, add the garlic minced and the shrimps, stir and add oregano, Italian seasoning, ground ginger, salt, and black pepper,. 

Raise the temperature a medium-high and fry them between 3-5 minutes, then add 1/4 cup lemon juice, and the mint leaves. Set aside.

Mash the avocados with salt, black pepper,  and 1/4 cup lemon juice.

Preparing the pie:

Grease a mold with coconut oil.

Pre-heat the oven at 375 F.

Divide the rice in two, but one part at the bottom of the mold, distribute it evenly and press with your hands.

Put the mashed avocados on the rice, spread it until the edges.

Throw the fried shrimps over, distribute them.

On it another layer of rice, the same procedure.

On the top of the rice put the sliced or shredded dairy or vegan cheese.

Take it to the pre-heat oven, and bake around 15-20 minutes, until cheese is melted and appears brown spots.

Before serving put on it, fresh chives, parsley or cilantro leaves and garnish it with balsamic vinegar.

Wait around 15 minutes before slicing it.

Enjoy with a salad and a cup of white wine!

Notes: You can use a double layer of avocados, around 8, to put over the rice instead of any cheese.

Double or triple the recipe, to save time on the weekdays.

Make more layers of meat and rice. 

Once the rice is made you can take it directly to the oven mold, it's up to you, I only recommend another way of eating it, because there are people who do not feel well eating it the traditional way, and doing this, they are more likely to assimilate it better.

The recipe makes between 4 -6 portions.
