Mmm! so simple but very rich.  A few years ago I started eating cauliflower, I had no idea that it existed because in my country they do not sell it, at first I ate it but it was not one of my favorites, over time I started to like it and every week in some way I eat it at home, my family does not like it very much so I always buy less quantity and make it for myself taking advantage of when I am alone.  When I started eating it was only as a creamy soup, then I found a way to incorporate it in my preparations because of the properties it has, a little by little I became a fan of it.

I love fried rice, so why not do it with cauliflower? it`s an extremely healthy veggie because has several vitamins and minerals, source of antioxidants, helps fight against several illnesses including heart and cancer diseases, is low in carbs, high in fiber,  full of nutrients, and is easy to add almost in anything, also in no time you have a complete nutritious meal.

FRIED CAULIFLOWER RICE WITH SHRIMPS AND VEGGIES (Paleo, Whole30, GF)

Time to Cook: 15 min
Total Time: 25 min
The recipe makes 2-3 servings



Ingredients:                                                                                                                                                              
  1. 1 pound  frozen cauliflower rice
  2. 1 pound shrimps cleaned and thawed
  3. 1/2 cup rainbow chard chopped
  4. 1-2 carrots sliced
  5. 2-3 celery stalks sliced
  6. 1/4 cup coconut aminos (add more or less to your liking)
  7. 2 tbsp minced chives
  8. 1/4 tsp smoked paprika
  9. 1/4 tsp red hot pepper or cayenne pepper (optional)
  10. 1/2 cup frozen peas (omit for keto)
  11. 1 small zucchini chopped
  12. 4 tbsp ghee, butter, coconut oil, or any other oil
  13. 1 medium onion sliced
  14. 4 large garlic cloves minced
  15. a splash of white wine (optional)
  16. black pepper to taste (omit it if you can`t tolerate it)
  17. salt to taste
  18. 1 lemon juice
  19. parsley or cilantro for decorating, or the combination of both

Instructions:

In a pot at medium-high temperature put the oil until starts to hot, throw the shrimps, add salt, black pepper, smoked paprika, garlic and saute them until they are crispy and cooked on both sides, around 4 minutes. Take them out, put the lemon juice over them, and set them aside.

Deglaze the pan with the wine, if not using it can be bone broth instead,  then add 1 tablespoon more ghee, throw the peas, chopped zucchini, and carrots. Saute them for about 3 min, add more salt if needed, add the cauliflower rice and the half on the onion slices and celery, cook for about 3 minutes until the liquid is evaporated, and all the veggies are tender and fried.

Add the shrimps back, coconut aminos, red pepper or cayenne pepper if using, and stir to integrate the savors.

In the end, add the reserved onion sliced and chopped rainbow chard, stir and let it wither.

Taste it, and add more salt, black pepper, and/or red pepper flakes to your liking.

Decorate it with minced chives, parsley, or cilantro leaves, and add additional lemon juice.

Enjoy!

Notes: Adjust to your diet or your liking, remove or add whatever veggie or meat you want into the rice.
