I know, I haven`t posted in a while, my muse is on vacation,  although I am making food all day, the complications at work did not let me think about new recipes, but today, I felt like it I could do it, so hands to work!

But first, at all, I want to say thank you to all my readers, thank you with all my heart, thank you for letting me be part of your life a little bit, thank you for supporting this place that arrived at one year on the internet.

Hope that every one of you has a lovely Merry Christmas with family and friends and a new and happy new year with lots of love, good work, new friends, a new family, and that life always flourishes with each step you take.

There is a bunch of this kind of recipe on the internet, restaurants, etc, I did not test all, only a few that got my attention, for example, paleoglutenfreeeats.com has one to die for, but I wanted to do mine, with my stamp, I like the food savory and spiced, but I think you have your rights do it the way you want, or what you tested before, but this one, is pure heaven indeed, filled with savory pumpkin spaghetti, different meats, sweet peas, sliced onion, garlic, celery stalk, spinach, almond butter, coconut aminos, virgin coconut oil, coconut milk, cheese, fresh parsley and chives, Himalayan salt, black pepper, salty roasted pumpkin seeds, and a pinch of cayenne pepper, mmm! do you want more?

Have I told you that I don`t like to waste food? 😅 yes, and I am keeping saying it, there are a lot of people dying because they don't have any food available, so always keep this in mind, don`t forget it, even if the food you get could be free, or cheaper.

I had leftover cooked ground meat and a lemon-turmeric chicken breast that I did yesterday, so this is the most important part of my stuffed pumpkin, but feel free to stuff the boat with anything that you have in your hands.

STUFFED SPAGHETTI PUMPKIN BOATS

Total Time: 1:20 min



Ingredients:                                                                                    
  1. 1 organic small spaghetti pumpkin (about 2 pounds)
  2. 1 pound cooked chicken breast
  3. 1/4 pound cooked ground meat
  4. 1/3 cup plant-based or grass-fed cheddar cheese shredded (optional)
  5. 1/2 cup sweet peas (I used frozen organic)
  6. 2 cups fresh spinach
  7. 2 celery stalks sliced
  8. 1 medium onion sliced
  9. 3 garlic cloves minced
  10. 2 tbsp almond butter
  11. 1/4 cup coconut aminos
  12. 3/4 cup coconut milk 
  13. 1/4 cup salted pumpkin seeds
  14. Himalayan or sea salt to taste
  15. fresh black pepper to taste
  16. pinch of cayenne pepper
  17. 2 tbsp of virgin coconut oil

Instructions

Pre-heat oven at 375 F.

Wash the pumpkin and dry it with a towel.

Rub it with coconut oil, and place it on the baking sheet or glass pan.

Bake it or them between 45 min to 55.

In the meantime, shred the chicken, or another meat you have.

In a pot or skillet put the other tablespoon of coconut oil at medium temperature.

Add sweet peas with salt and black pepper, and cook them, then the meat, sliced onion, garlic, celery stalk sliced, and sautee them. Set aside.

Take the pumpkin out of the oven and let it cool.

Cut halfway and scope the seeds.

Make spaghetti in each half, but let it inside.

Seasoning the spaghetti with salt and pepper, be careful do not to break it.

In a small bowl pour the coconut aminos with the milk and the almond butter, a pinch of salt, black pepper, and cayenne pepper. Stir until well combined.

With a spoon pour about 3- 4 tablespoons on each spaghetti, then add half of the shredded cheese and mix everything.

Throw the meat onto the boats, making space in the center, then add more cheese and spread the rest of the almond butter-coconut aminos sauce.

Bake at 350 F for about 15 minutes or when the cheese is melted and it starts to browning.
