Paleo Chocolate Sweet Potato-Carrot Bundt Cake |
Friends, this bundt cake is outstanding! 💗 it`s moist with strong chocolate savor and a very healthy treat that you won't compromise your health at all.
If you don`t say anything thing that I did, no one will say what`s inside it, as you already know me, a little pious lie does not hurt anyone 😁 only you are hiding veggies into it that they don`t taste at all, and in this way, you are taking care of your family and improving their health, right?
It`s made with sweet potato, carrot, coconut flour, sugar, and oil, honey, cacao powder, arrowroot flour, eggs, and collagen peptides, to name some. It`s loaded with fiber, vitamins, minerals, healthy fats, proteins, coconut sugar does not raise the glycemic index like common sugar does, and it has traces of minerals.
I ate in the two variations, warm and cold, believe me, when you eat it cold is a heavenly mix between ice cream and brownie, it`s dense but melts in your mouth, the flavors are more strong too, I can`t describe how delicious it`s.

PALEO CHOCOLATE SWEET POTATO-CARROT BUNDT CAKE

Preparation Time: 10 min
Baking Time: 45 min.
Total Time 55 min.
Ingredients for the Bundt Cake:
Instructions:
Preheat the oven to 350 F.
Grease a bundt pan with oil and set it aside.
Peel and chop the sweet potato and carrot and the pieces into the food processor.
Add eggs, salt, vanilla, honey, and coconut oil, blend until everything is well mixed, scraping the sides.
In a bowl mix all the dry ingredients and throw in the food processor, blend again until you have a dough formed.
Pour dough into the greased bundt pan. Bake until a toothpick comes clean about 40-45 minutes.
Let it cool to room temperature, and enjoy right away or take it to the fridge until is cool enough to eat!
Chocolate Frosting 1 (2 ways)
Ingredients:
Instructions:
In a pot at medium-low temperature melt the coconut oil with milk and the chips.
Let it cool at room temperature and frost the cake.
Chocolate Frosting 2:
Ingredients:
Instructions:
Soak the cashews overnight or at least 2 hours in hot water, then drain them.
In a food processor or blender, blend everything until smooth.
Pour it over the cake and eat if you can`t wait, but it develops a more creamy and thick texture when is on the fridge for some hours.
Enjoy!
Notes: You can put anything that you like on this cake, or nothing at all, sometimes we prefer not to put any frosting, this permits that you take a piece with coffee or anything else because it is lesser sweet.
I forgot to mention that I made it with Nutiva Organic Coconut oil Butter flavor, This flavor is made from pure non-GMO fermented plants including sunflower, coconut, and mint, it`s a perfect vegan alternative to butter and ghee.

- 5 tbsp honey or maple syrup
- 5 tbsp coconut flour
- 4 tbsp arrowroot flour
- 5 tbsp coconut oil, butter, or avocado oil, more to grease the pan
- 1 tsp vanilla extract
- 3/4 tsp pink or sea salt
- 1/2 cup coconut, maple sugar, or another sweetener
- 1/2 cup cacao powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1 tsp instant coffee (optional)
- 1 scoop collagen peptides (optional)
- pumpkin seeds for decoration (optional)

- 3/4 cup nut milk (add more if needed to your liking)
