Chocolate Fig Bars with Avocado Pudding

Those bars are life-changing sooo delicious! I wonder if it will work but yes they worked and they are an excellent sweet treat without refined sugar added.

If you have been following me, you know that I love figs that mild flavor and sweetness makes my mouth watering all the time, I can eat them all days although they disappear from time to time from the market, so I try to buy them dry without sugar added on Amazon or in another physical store.

They are packed with powerful antioxidants:  vitamins A, B, C, K, and minerals like copper, manganese, magnesium, potassium, iron, sodium,  zinc, and calcium, are low in calories and protein, high in fibers, carbs, and sugar.

Also, they are cancer-fighting fruit, protect against body oxidation, are very nutritious, can regulate blood sugar levels, and blood pressure.

Despite all of this, check the amount you can eat daily for the sugar content they have, all in moderation guys.

Additionally to the crust filled with nuts and seeds, the smoothness of the avocado cream on top is ridiculous savory and I think it is like you have a small piece of the chocolate nut pie in your hands, what you think about it?

For these bars, I prefer chia seeds, but you can do it with flax seeds if you don`t have them at this time.

CHOCOLATE FIG BARS WITH AVOCADO PUDDING

Preparation Time: 20 min
Total Time including frozen  time: 50 min
The recipe makes 16 bars adjust to your liking.



Ingredients:                                                                                                                                                                               
Bars
  1. 1 1/2 cup dried figs or dates
  2. 1 tbsp chia seeds
  3. 3/4 cup walnuts
  4. 1/2 cup sliced almonds
  5. 1/4 cup pistachios
  6. 1/4 tsp salt
  7. 1/4 heaping cup of cacao powder
Avocado Chocolate:
  1. 3 ripe avocados
  2. 1/4 honey or maple syrup, or another, more for tasting
  3. 1/4 cup and 2 tbsp cacao powder
  4. 2 tbsp coconut milk or another nut milk (I used coconut milk)
  5. 1 tbsp chia seeds
  6. 1 tsp vanilla extract
  7. 1/4 tsp salt 
Instructions:

Soak the figs or dates in water for 30 minutes then drain all the water.

In a food processor or high-powered blender throw all the ingredients until well blended, scraping the walls, I like mine with nuts pieces.

Spread mixture evenly into a lined pan with parchment paper  9x8.5 or 9x8 inches dusted with cacao powder. Transfer to the freezer while you are making the avocado cream.

Avocado- Chocolate Cream: 

In a blender throw all the ingredients until a rich cream is made.

Pour it over the frozen crust and transfer the pan to the freezer until set, cut into squares then pass them to the fridge in an airtight container up to one week or frozen then for about 1 month or even more, then defrosted each one you want to eat for about 30 minutes.

Notes: You can choose to add the nuts or seeds that you want.

Cacao could be substituted for cocoa powder.

The figs can be changed for any dry fruit you like most.
