Hey friends! I only moved away a little bit, but never think I have left, you will have me for a long time 😁 I have been trying to change my job and that consumes long hours on the internet looking for and applying, besides my son got married last Friday and I have been helping him in everything I could.

Well, dears, although I love fresh lemons in almost anything, I had doubts about this dish, I don't know why? isn`t crazy?  maybe is that I like creamy spaghetti and I did not see how it could turn, so I decided to make it and know exactly what it is about. My recipe is based on Giada de Laurentiis recipe.

Oh, guys! what can I say? I really can't explain this very well,  but I am doing my best, this is outstanding and out of this world! it`s very fresh, each the flavors are up and you can feel them separately in your mouth, I am really impressed, this is going to be one of the favorites and easy dish in my house for sure, it`s really easy to do, and it's paleo, gluten-free, grain-free, non-GMO, and soy-free.  

Please try to use only fresh lemons or limes and the zest always enhance the taste of the dish.

I have an issue with parmesan cheese, I can`t stop eating it, ha, ha, do you? I put lots more of it. I am intolerant to lactose so I have to take 2 pills before I eat anything that contains milk products, or buy some lactose-free.  Always do what works best for you, do your own research, but the most important thing is to listen to your body if you feel some discomfort with something you are eating, stop it right away.

This spaghetti can be Keto if you change the paleo and gluten-free pasta for any keto that you like, or entirely vegan if you use parmesan vegan cheese and omit the shrimps, so go for it, but don`t miss this opportunity to eat it.

I love Italian food, there is something in it that has passed through my country, for the Spaniards because all of them live in the same Mediterranean culture, so it`s impossible that they interchanged savors, recipes, and the same kind of meals, sometimes with some own variations like spices, marinates, etc, in fact, the oregano we used to use has a different and amazing flavor than what you have here.

So be careful, this spaghetti is dangerously tasty 😋


LIME SPAGHETTI WITH SHRIMPS AND CAPERS (Paleo, GF, Grain-Free)

Preparation Time: 10 min
Cooking Time: 15 mn
Total Time: 25 min.
The recipe serves around 3-4 persons


Ingredients:                                                                                                 
Pasta:
  1. 2 packets Cappello`s spaghetti 143 g each 
  2. 2/3 cup grated or shredded parmesan cheese + for garnish (optional) or any vegan parmesan substitution
  3. 2/3 cup extra virgin olive oil + 1 1/2 tbsp separated
  4. 1/2 cup fresh lime juice  (2-3 limes or lemons)
  5. 1-2 tbsp lime zest + for garnish
  6. 1/2 tsp Himalayan or sea salt
  7. 1/4-1/2 black pepper
  8. 1/3 cup fresh basil or parsley leaves ( I used dry basil and fresh parsley)
  9. 2-21/2  tbsp capers

Shrimps:
  1. 1 pound shrimps, peeled and deveined
  2. 1 tbsp extra virgin olive oil
  3. 1/8 tsp black pepper
  4. 1/4 tsp ginger
  5. 1/4 tsp Himalayan or sea salt
Instructions:

Shrimps:


Sprinkle salt and black pepper over the shrimps and stir.

In a skillet at medium-high temperature, add the tablespoon of olive oil, add them to the pan, cook them in a single layer until they are pink about 3 minutes aside.

Pasta:

Cook the pasta according to the package directions with abundant salty water, until tender but still firm to the bite, stirring occasionally to prevent sticking. Drain the pasta but reserve some pasta water about a cup.

While the pasta is boiling, whisk the lime juice, virgin olive oil, zest, and parmesan cheese together in a large bowl or a big pot at low temperature for easily stir.

In a skillet, at medium-low heat fry the cappers with 1 1/2 tbsp of olive oil for a little time, set aside. 

Then toss the drained pasta on the lime mixture, add some of the reserved pasta water about 1/4 cup at a time as needed to moisten it, stir until well incorporated.

Add salt, black pepper to taste.

Serve and garnish with the fried capers, fresh lime zest, more shredded parmesan cheese, torn parsley or basil leaves, or for best results the combination of both.
