Never you can`t be wrong with fresh fruits inside a slightly sweetened bread, I love the smell when it was baking, I love it! I think any fruit will work, but better with the combination of different is amazing!. The best part is that it`s made with almond and coconut flour, they increase the flavor of this, so it`s very healthy and loaded with eggs and a scoop of protein powder.

There are around my house a bunch of wildflowers, and I love them, aren`t they pretty? they make everything more colorful and romantic, as well as this bread.

Let me tell you something so that you do not fall into the temptation that I fell 😂 for this type of bread you need to wait for it to cool completely, otherwise, it will break apart, it does not care it`s for your family, but if you plan to share with another person you will be in troubles.

The first time I made it was with only mangoes, the second time with mango, pears, and figs and now with blueberries, peaches, a few chunks of mango, and raisings, it turned so good! so you can make any variation, but I think It is a good addition to our daily routine, it contains 8 g of protein per slice and 4 g of fiber, too good to despise, it is also perfect for kid's snack or dessert right?

Preparation:10 min                                                
Baking Time: 60 min   
Total time:  Around 1:10 hours
Serves: 12 slices


Ingredients:                                                                                                             
  1.    3/4 cup of Coconut Flour
  2.    1 cup of Almond Flour
  3.    8 eggs
  4.    3/4 tsp of Salt
  5.    1 1/2 tsp of Baking Powder
  6.    1 scoop protein powder (optional)
  7.    1 cup melted ghee, butter, or coconut oil 
  8.    2 tbsp of honey, coconut nectar or sugar, maple syrup, or   another sugar substitute  
  9.    1 1/2 tsp fresh lemon juice or apple cider vinegar
  10.    1/2 cup dates or raisins (to your liking)
  11.   1/2 cup diced mango
  12.    1/2 cup blueberries
  13.   1 cup diced peaches
  14.   1/2 tsp cinnamon
  15.   1 tsp vanilla extract 
  16.   1/4 tsp ginger (optional)
  17.    1/2 cup unsweetened dark chocolate chips

Directions:

Preheat the oven to 300 °F.                                                                         
Grease and line with parchment paper up to the edges a tin 10 x 5 inches. Set aside.

Melt the ghee in a saucepan at low temperature, let it cool at room temperature, then stir in honey and cider vinegar, set aside.

In a large bowl beat eggs, then add salt, vanilla extract, and ghee until well mixed.

In another bowl mix the dry ingredients: baking powder, grounded cinnamon, almond, and coconut flour, stir, and don´t let any lumps in it.

Then stir well into the wet ingredients until they will be well combined, it`s a thick batter, incorporate the fruits and choco chips.  Let batter sit for 5 minutes.

Pour it into a lined loaf pan.


Bake for around 50 - 60 minutes, depends on your oven, or until a toothpick inserted in the center comes clean.

Allow bread to cool at least for about 2-3 hours, is better overnight. 


Take it out of the pan, remove the parchment paper, slice and enjoy it!

Notes: You can leave the fruits, vanilla, cinnamon, and honey out so that you could enjoy it every day with butter, mashed avocado, or anything that you like, it can be eaten too as a sandwich bread.


You can put the chocolate chips inside or on the top of it.

I recommend putting it into the fridge when passing 2 days if there is any slice left so that it did not get spoil because of the fruits in it.

It`s not very sweet so if you like it sweeter add more tablespoons of honey or maple syrup.


I haven`t try to do it in a muffin tin, but I think could be work perfectly.
