I like salad, they are fresh, 
very welcome in our houses, easy to make and you can eat it for breakfast, lunch or dinner, also you can make it for parties, family meeting, etc.

If you choose the right ingredients, trying to buy organic or non-GMO products, they will provide you with a bunch of healthy components that have been proven to supply the best result in your body instead of harming it, and you have a complete and awesome meal.

I made my mayonnaise, the process does not take time and it´s more healthy than store-bought, then, I put fresh vegetables into it to enhance the quality of what we eat. The possibilities are endless so you can choose to make it in the form you want to.

The nutritional properties of avocados fruit are amazing, they are named as " Superfood", are rich in vitamins as niacin, D, K, E, B6, B12, riboflavin and thiamin, minerals as phosphorus, iron, potassium, zinc, magnesium, calcium and copper. also, they have an awesome bunch of fiber and antioxidants qualities.

Is a good source of healthy fatty acids, also helps reduce the high bad cholesterol levels, reduce the risk of cancer, improve the absorption of nutrients, protect your skin from aging damage, help maintain strong bones, protect your liver and eyes, help weight loss and keep your sugar level right,  and they have heart-healthy properties.





 


CHICKEN SALAD WITH AVOCADO HALVES CUPS (Paleo, Keto)

Ingredients

  1. 1 cup of avocado oil
  2. 1 clove of garlic
  3. 1 teaspoon of mustard
  4. 1 teaspoon of coconut sugar or any sweetener you want to add
  5. Half of the small onion
  6. 1/2 teaspoon of salt
  7. 1 teaspoon of natural lime juice or 1 teaspoon of Apple Cider Vinegar
  8. 3 fresh eggs (one for the mayonnaise and 2 boiled)
  9. 1 big stalk of celery or 2 if they are a small cut 
  10. 1 medium onion chopped
  11. 1/2 pound of  cooked chicken strips
  12. 2 tablespoonful of parsley or 1 of parsley and 1 of cilantro
  13. 1/2 sweet red bell pepper chopped
  14. 10  green or black olives chopped
  15. 3, 4 fresh, ready to eat avocados halves (depend on the persons that are going to eat)
  16. Dash of black pepper
Directions

Boil 2 eggs and let them cool, then mashed with a fork.

How to pasteurized an egg?

Let your fresh egg at room temperature, then put in your pot with enough water to pass the top of the egg , put in low heat temperature, place your thermometer inside until the water riches140°F  or 60°C, keep or adjust to less temperature, do not let to reach more temperature because it starts to coagulate. Cook it for 3 to 5 minutes, large egg 4 minutes, extra-large egg 5 minutes. Put the egg in the freshwater rapidly and let it cool. You can use it directly in your recipe or you can store in your fridge until uses. Never put it with the raw eggs. This pasteurization processes its use for any recipe that calls for raw eggs.

Making the mayonnaise. Take your blender, it has to be completely dry, throw at the bottom the pasteurized egg, salt, chopped onion, sugar, mustard, a tablespoon of lemon juice, and garlic. blend the mixture at high velocity for about 10-15 seconds.

Then put the blender on low speed and open the small lid at the top, begin to add the oil as a fine thread.

When you are almost finishing, you can see that it is just made and is emulsified, but you have to end all the oil you have. 

Stir and taste the salt,  put into the chicken, and mix well, cut into little pieces the celery stalk, chopped onion, olives, sweet bell pepper, a dash of black pepper, and the 2 boiled eggs mashed. 

Put in your fridge until cool, about 1 hour. When you are going to serve, cut the avocados into halves and stuff them with the chicken salad. Enjoy!

This recipe is for 3 persons.
