Always, the ice cream is perfect any time, any season, are you agree with me? This one it´s very satisfying has a good texture and a strong fruit taste, only you need a food processor or a strong blender to do it, and in less time you can eat it.
I had to get it out in front of me because of the way I was eating it I would have devoured everything.
You can do this kind of ice cream with any fruit, if you plan to eat it right away, I suggest that you freeze your fruit first, if not, you can do it with fresh fruit and then take it to the freeze, but leave it at room temperature before eating it between 20-30 minutes so that the fats soften, or you can put it in the upper part of your fridge and eat it as a cream or custard is your election.
We have seen everywhere that cashew butter has become something that can be aggregated as a base to almost anything, it is very versatile, and always works both for salty and sweet foods.

The best part of this ice cream is that is more healthy than the store brought because the nutrition facts of the cashews boost it, they are high in calories, have vitamins B and C, minerals like calcium, magnesium, phosphorus, copper, zinc, iron, high in monounsaturated and polyunsaturated fats, rich in protein, fiber, carbs, potassium, and sodium.
The health benefits of cashew are: strengthens bones, improves kindness and the risk of gallstones, maintains weight, and reduces the risk of cardiovascular diseases.
This is my recipe among hundreds out there, is paleo, vegan, sugar-free, gluten-free and dairy-free, very nutritious, and creamy, what more can we ask for? Hope you like it because I love it!.
STRAWBERRY-CASHEW-COCONUT ICE CREAM (Paleo, Gluten-Free, Dairy-Free, Sugar-Free)

Blending Time: 10 min
Total Time: 20 min
The recipe makes around 4 servings.
Ingredients:
Instructions:
Soak the dates to soften them before, between 15-30 minutes in filtered water, set aside.
- 1/3 cup of the coconut cream
- 1 cup of unsalted cashew butter
- 2 cups of frozen organic strawberries chopped or sliced
- 1/3 cup chopped strawberries to add at the end (optional)
- 1/4 teaspoon of Himalayan salt
- 16 dates hydrated, pitted, and chopped
- 1 teaspoon of lemon juice
- 1 teaspoon of vanilla extract (optional)
- A pinch of salt
Instructions:
Soak the dates to soften them before, between 15-30 minutes in filtered water, set aside.
Transfer to mold, and add another part of chopped strawberries, stir.
As I said, you can eat this ice cream right away or transfer it to the freezer until you want it, remember to let it out on the counter around 20 minutes or more before you are going to eat it.
Note: I made my own cashew butter soaking the raw nuts all night, and then blending them in my food processor, but you can buy the butter if you prefer.
Please, try to use coconut cream, not coconut milk, the first one works better than the milk.
