I wonder if you recognize this color? This is the same dough that  I used to make a Sugar-free Cuban Capuchino Cake but this one is savory to make a log, how I couldn`t think in it all these years? where was my muse hidden?  Since yesterday I have been regretting not have thought of making this before because it is life-changing! ๐Ÿ˜

This log is light and very low in carbs 2 g per slice alone and 3 filled, it`s fresh, melts in your mouth, filled with proteins and it has a tiny quantity of arrowroot flour that`s all, but I warn you, one it is going to touch your taste buds you will dream all day about it ๐Ÿ˜‚ I am joking but am very serious, it is perfect to make it in a small pan to serve a guest for a party, or as a breakfast or a simple dinner as I did accompany with a fresh green salad, and I almost forgot to say you it does not has an eggy taste at all.

So what`s inside? savory sp
ices, minced veggies, herbs, garlic, that you can`t skip if you don`t want them,  isn't too good to be true? no only the eggs whites make the work as you should know the famous cloud bread, the yolks make it happens too, and I think you can do whatever you want with this taking into account the steps to follow as in all recipes, the same as the cloud bread can be made with this dough adding seasonings to taste, I did not try it in that way but I think it will work fine, so who is the first person to dare to do it?  I could bet that it will be better than this one, tell me in the comments below, and can we share what is our best advice or the failure?

None one is perfect, this is the beauty of everything, so if it breaks a little bit, it`s ok, you can fix it with the mayo and your hands of course (jeje) the best thing is how it tastes, so take the risk of doing this and everything else, get out of your comfort zone and say yes I can. I have people who tell me all the time did you do that? how is it possible? Of course, everything is possible in this world if you want it ๐Ÿ˜‰

PROTEIN KETO-PALEO SAVORY LOG:

The recipe makes around 6 thick slices.
Preparation Time: 15 min
Baking Time: 15-20 min
Total Time including cooling: 1:05 h                   

                               

Ingredients Log:

1. 10 large eggs at room temperature
- 8 eggs yolks
- 2 whole eggs
2. 3 tsp arrowroot flour
3. 1/4 tsp + a pinch of sea salt
4. 1/4 tsp garlic powder
5. 1/2 tsp fresh parsley finely chopped or 1/4 tsp dry
6. 1/4 tsp ginger (optional)

Filling:

1.  1 (14.75 oz) canned pink salmon drained or freshly cooked salmon
2.  3/4 cup mayo separated (1/2 cup for the filling, 1/4 cup for dressing the log)
3.  1 tsp Dijon Mustard
4.  1 medium celery stalk thinly chopped
5.  1/4-1/2 tsp ginger chopped or 1/4 ginger powder (adjust to your liking)
6.  1/4 cup onion thinly chopped (I added about 2 tbsp more)
7.  1 tbsp parsley or cilantro leaves chopped (I like the combination of both)
8.  1/4-1/2 tsp red pepper flakes (adjust to your liking or leave it out)
9.  1 tsp lemon zest
10.1/4 tsp black pepper
11. salt to taste

How to make it?

Drain well the salmon, if possible, use a colander and push it with a spoon. Add all the ingredients and mix well until well combined. Reserve in the fridge until the log is baked.

Preheat oven at 375 F. Line up with parchment paper the bottom about 1 inch up to the sides of a baking 8x6 inches pan or any other you have similar if a little wider better. If you encounter that the paper does not fit well, squeeze it first with your hands and then put it in the pan. Don`t put any oil on.

Put a large baking tray on the bottom of the oven with 1-2 inches of water, this step prevents the
 cake from burning and helps it rise without drying it.
Separate de yolks from the whites.

Pour the 8 yolks with 2 whole eggs in a stand mixer with a salt. Beat them together for about 15-20 minutes until the batter develops a pale color and triple its volume.

Add teaspoon by teaspoon the arrowroot flour folding each one into the batter with a fork or a rub
ber spatula, then add the rest of the dry seasoning and herb, be careful in this step if deflates you won`t have a spongy cake.

Transfer the thick batter into the lined baking pan distributing it.

Bake it for about 15-20 minutes without disturbing it until a toothpick comes clean, and it`s golden brown.

Transfer it to a cooling rack until it`s warm to the touch, carefully take it out to the baking pan, and peel th
e paper. It will deflate, don`t worry you did nothing wrong.

It`s time to roll it out with a parchment paper, be extremely careful don`t break it.  Let it cool.

When it is cool to the touch in the inside, open up, and spread the salmon filling on, don`t go further on the corners, let about 1.5 cm without the filling.

Done? let`s roll it again with the parchment paper, trying to push it a little bit in each round, it`s a little filling come out, try to fix it, then transfer to the fridge to set for at least 20 minutes.

Take it out, spread the remaining mayo on, decorate it the way you like it, and put it back to the fridge until you are ready to serve it.

Cut it out with a serrate knife.

Notes:

You can double the recipe and make a large log or make in a small pan to serve as appetizer filled with anything that you want: shredded chicken, ground meat, vegetables, etc. Try that the filling is at the dry side to mix it with mayo, greek yogurt, etc.

Although the cornstarch is not Keto nor Paleo, for gluten-free persons you can include in the recipe the same quantity instead of the arrowroot flour.

Paleo eaters can change the Monk fruit sweetener 1:1 for coconut or maple sugar, the color of the log will be darker in color.

For the rest of the persons who like the recipe, the sugar cane will be a substitute 1:1.
