Vegan Coconut Cream Cheese -2 Ways (Paleo, Keto, Whole30, Gluten-Free, Dairy-Free, Lchf,  Plant-Based)



This is a delicious and healthy substitution if you just don`t want to buy any vegan cream cheese. It makes me remember the cream cheese made with yogurt my mom used to make at home, I don`t see the difference and it`s a  life-changing for those that can`t eat, don`t want, or has lactose intolerance like me, I don`t remember when was the last time I ate cream cheese, even if I take the pills I don`t feel good.

I have been playing with it to have the right acidity and saltiness in it, this is my tested recipe that can`t change for anything 😂 am joking!  but yes, I think it`s perfect, my husband said that it`s amazing! yuppy!

These are my two ways to make it, but I saw other variations adding probiotic pills that I haven`t made. I almost all the time do more the first recipe than the second one because it requires more time, but the second one it`s best because provides the benefits of the probiotics that have been formed into it and it`s denser, but don`t worry, the cream cheese will harden anyway in the fridge because of the fat content in the cream.

Either way, it`s very customizable if you want ii sweet,  decrease a little bit the salt and add your preferred sweetener, or add herbs, garlic, onion, for a savory one, and it`s better than the dairy one because it provides healthy fats, it`s gluten-free, dairy-free, vegan, it`s not processed, does not have any additives, and you feel like you are eating the original one, so now you will have a block of real cream cheese for your recipes.

                                                                                                    The recipe makes around 8 oz of cream cheese
Preparation Time: 5 min
Total Time including chilling: first recipe: 4 h, the second recipe:24-36 h
Total Time: first recipe: 4:05 h,  the second recipe: 24:05 h                            



Ingredients:
  1. 1 can full-fat coconut cream
  2. 1/4 + 1/8 Himalayan salt
  3. 3 tbsp fresh lemon or lime juice
  4. 1/2 tsp organic active apple cider vinegar
  5. 1 1/4 tsp nutritional yeast

Instructions:

First Recipe:

Take a can of full-fat coconut cream to the fridge, the best results are if you let it overnight.

Scoop the cream into a medium glass bowl with a wooden spoon, reserve the liquid part for a smoothie, or something else.

Throw the salt, vinegar, lemon juice, and nutritional yeast on, and stir well until everything is well incorporated, smashing the balls it has, or take it to the blender, it`s up to you.

Taste it to your liking.

Let it harden in the fridge for 4 or overnight hours if you want a cream cheese-like, or eat right away to have a sour cream-like to put on soups, canapes, bread, sandwich, wraps, tortillas, etc.

Just done, the texture is softer like sour cream.

Just done, as you see it`s on the cassava flour tortilla with mashed avocado, and pulled pork.

                                                                                                                              


Second Recipe:

Repeat the first 4 instructions described above.

Transfer it to a cheesecloth, put it on the strainer. then on the bowl to let drip the excess coconut water.

Add 1 or 2 capsules of probiotics, stir well, the quantity depends on the quantity of the millions of live bacterias it has.

Let it be fermented between 24-36 hours in a dark place, don`t let it more time.

Remove it from the cheesecloth, and transfer to a glass container with a lid, discard the liquid.

Take it to the fridge to chill and enjoy!.

Note: Although I have made it with coconut cream, you can use the chilled coconut cream from the full-fat coconut milk, I think it`s a little less quantity but it works too.
