Hi, my preferred people! 🙋 I am enjoying every day the vegetables spaghetti or zoodles, it's a quick and fresh meal, low in carbs, unprocessed, it apports fiber, vitamins, and minerals, and everybody loves it including the little ones, right? In fact, when I go to the market, I don't go to the gluten-free pasta section anymore, don't be fooled, I like it, but I think the veggies are healthier and I'm excited to invent something new with them.

I want you to know that my objective with this blog site is that everyone has access to substitutable food, I want to do everything possible to turn the food that almost everyone can have at home into something really tasty, healthy, and not boring. I do want my blog to reach each and every one of the places where the food might escape from the table, and not only think of those who already have it because they have enough money to buy, also I wish I could stop the waste of it, approximately 1.3 tons get wasted or lost in a year around the world, see this article.  So don`t waste it please, give it to someone who is needed before it gets spoiled.

Oki, do we continue with the recipe? I know some people say that this is not the same as the original spaghetti, but who cares? to the extent that we all incorporate it into our diet, it will become a habit, and is very possible that at some point, they try it at least once in a while, and then they will realize that it can be enjoyed in different ways according to the taste of each one, the possibilities are endless like we have done with the other pasta recipes.

I have made it with shaved parmesan cheese, cooked with chicken breast in the same skillet, this one, and I plan to do more, also you can do it too with potatoes, and... I will reserve my new idea, I have to taste it first, and then I will put the recipe, deal?

I had a spiralizer that was given to a friend of mine, but it was broken, so at that time I made them with my potato peeler which has the normal peeler on the one hand and strips can be made on the other, it a little more work I know, but there are a bunch of people that don`t have any spiralizer as me right now and I took plan B, only think and the magic is coming 😂 come on, it doesn't break your hands either by doing it, I assure that to you.

So, if you want large strips of sweet potato, search for some that are large in height, also a large onion too, because today we are going to do onion strips, how? easy, take the onion for the wide part of it, and you will make the strips as far as they break, sometimes they break before turning it completely but nothing happens, settle hard enough and do a little pressure, then you will do it until you think it is enough for you about the sweet potato that you have cut, in my case, I am an onion fan, and I don`t care about the relation, 
I finished with a little to save for another meal.

I know they are not the best pictures, and I forgot to take more because I was in a hurry, next time I will do my best and update this post with better ones. Indeed I have to buy a camera, but now I can`t afford it, so all my pictures have been taken with my cell phone. 



SPICED SWEET POTATO SPAGHETTI WITH BASIL-TOMATO MARINADE AND CHARRED TOMATOES 


Spiced Sweet Potato Spaghetti with Basil Tomato Marinade and Charred Tomatoes (paleo, gluten-free, grain-free, dairy-free, whole30, vegan, plant-based).jpg

Total Time: 15 min
The recipe makes 2 servings


Ingredients:                                                                                
  1. 1 pound raw sweet potato 
  2. 1 package of grapes tomatoes (any kind will work)
  3. 1 large onion 
  4. 2 garlic cloves minced
  5. 1 1/2 cups tomato-basil marinate
  6. Himalayan or sea salt to taste
  7. black pepper to taste
  8. red pepper flakes to taste
  9. 2-3 tbsp sesame or coconut oil
  10. 2 tbsp sesame seeds for garnish
  11. 1-2 tbsp mint leaves chopped or torn for decorating
  12. 1 tsp balsamic vinegar (optional but it turns this dish to a second level)

Instructions:

Shredded the sweet potato, then the onion, mix them together, and set them apart.

In a skillet at medium-high temperature add the oil, when it`s hot throw in the minced garlic and cook it until fragrant.

Add the sweet potato and onion, and cook for about 6-8 minutes stirring until they are tender but not bland.

Add salt, black pepper, and red pepper flakes. Stir and taste, remember you are going to put a tomato marinade that brings salt, but you need salt for them too, if you don`t put it, they won`t have any savor, try a little by little until the desired taste.

In another pot, add a little oil at medium-high temperature, throw the fresh tomatoes, with a little salt and black pepper, and char them to your liking.

In a pot warm 
the tomato marinade until it starts to boil, add the balsamic vinegar and stir well.

Serve the sweet potato spaghetti on two plates, add the tomato marinade over, then the charred tomatoes, and garnish with the sesame seeds, and torn mint leaves.
