Almond Flour Fritters


Something like these almond fritters my mom used to make all my life but was with the leftover grounding bread and eggs when she finished the croquettes, so we ate croquettes and fritters, I love them, and everybody that was at that time in my house always said the same. This was the simple thing that you will remember for the rest of your life, so I made croquettes, the post will come soon, and I thought I will make it happen again but more healthy, why not? but I add more things to make them more savory.

I did not say any word to my husband or my son 😇  and prepared and fried them waiting for both faces, you know what? they ate everything, and I was laughing at myself, when they finished I said to them, they were spectacular, right? the response was:  oh my goodness yes indeed! 😂  I explained to them how they were made, and said now you are eating well. They were astonished 😲  but they didn't say anything.

Every day try, don`t get tired of your family, friends, and co-workers, and spread the voice, we need to eat better for our children to be strong and healthy, don`t let the day pass by passively, let the near people know about what it`s happening with the food, soil, animals, illness, take your individual actions because if everybody says to other people we just are making it happens, try don`t to buy GMO food, at least to start, the companies don`t want to lose money so then we can achieve to have good feeding and organic food raises for everybody with better price, some will look at you as an ET, don`t worry they don`t understand now but one day they will.

Straight to the recipe, so when you need some appetizer for a party, reunion, or just to make Sunday breakfast or brunch, this recipe is very easy to make, and everyone will love it! It`s low in carbs, good fats, and proteins, and gluten-free, one of them has 3 g carbs and 4 g protein.

Mix everything until you have a thick dough, put enough oil to fry them, and that`s it, you will have these fritters with anything you want to include, veggies, cooked meat, chicken,  fish, chopped onion, garlic, seasonings, or cheese, it can be made sweet, hot, savory, the imagination is endless, also is a good way to empty the fridge, could be a snack for the little ones, and you can accompany them with your favorite sauce, yummy!


For the vegan folks, add if they want 1-2 tbsp of nutritional yeast or vegan cheese, also you can make it only with eggs, seasonings, herbs, and almond flour. Mine was made with cheese, seasoning, and herbs only.

This is an approximate recipe, you need to adjust is too dry add one egg, it is thinner add more almond flour, depends on the quality of the almond flour, there are ones more absorbent than others, and your favorite touch, if you like to take the dough with a spoonful and deposit it for frying, leave it manageable, if you prefer it drier and be able to mold it with your hand, add more almond flour.

Preparation Time: 5 min
Cooking Time: 15 min
Total Time: 20 min
The recipe makes 20 fritters (depends on the size you want them)


Ingredients:

2 cups almond flour (add more or less if necessary)
4 large eggs
Splash of coconut or almond milk
1/4 cup chopped onion
2 garlic cloves minced
1 tbsp dried parsley or cilantro leaves or fresh
1/2-3/4 tsp pink or sea salt 
1/4 tsp black pepper
1/4 tsp smoked paprika
1/3 cup chopped cheese
1/4 cup chopped ham (or leftover ground or minced meat)
1/2 tsp baking powder
Enough coconut or avocado oil for frying, better if you can cover them with the oil.

Instructions:

In a bowl beat the eggs with the salt and the splash of milk.

In another bowl mix, the dry ingredients and set aside.

Throw the dry ingredients into the beaten eggs and mix until well combined.

In a pot put the oil at medium temperature, and wait to reach the point of frying.

Whit a spoon take the dough into the oil working in batches until finishing.

Paper towel on a plate to absorb the excess grease.

Enjoy with any sauce, ketchup, mayo, etc, or just plain!

Note: This recipe can be made without any cheese. 

I don`t like to put the exact quantity of salt because my taste could not be yours, so adjust it depending on the addition you have on your hands, I mean, if you have cooked ground meat, fish, chicken, cheese, they will add salt, but if you add chopped raw veggies, you need to increase the quantity to your own taste.
