The temperatures are rising, and we are going to welcome the Summer!. I love the end of the Spring, and Summer is my preferred station. The climate where you can walk to any place, and you can wear light clothes, there are green and flowers 
everywhere, you can breathe joy and enthusiasm, the children in the yards doing what they like most of all, people walking, playing in parks, and everything has much more fun. My son tells me all the time, "comes the Vitamin D", ha, ha. Indeed, we get more vitamin D because it´s better absorbed by the presence of the sun. Protect you and your family with skin protectors, hats, caps, long-sleeved shirts, or anything else, but don´t let the sun goes unnoticed, it´s very important to us.

The hot time brings us to, gather in the activities of the family or with friends, do parties outdoors, have picnics, go to the lakes, swimming pools, and beach, excursions, or spent time in the yard of your house or at a friend's.

Besides these, we change the way we were eating, now the food is more simple, and fresh, we want to drink cold drinks, more ice creams and salads with meat or without them, generally we do not want hot food that might fall heavy on our stomachs.

Here is the Homemade Mayonnaise for the rescue, or several sauces that can be made from it, depending on the type of food you want, those dressings are very welcome in the house, choose what you like to combine more. This is a savory way to eat good fats, proteins, and veggies with your food, salads, crackers, bread, meats, seafood, and anything else, and you can cook or bake with them too, also they are paleo, keto, and gluten-free.


SAUCES MADE FROM THE HOMEMADE MAYONNAISE (Paleo, Keto, Gluten-Free)

Paleo Avocado Mayonnaise:
  1. 1 cup of mayonnaise
  2. 1 avocado or 2 (depends on the size)
  3. 1/4 teaspoon of salt, more to adjust
  4. 1 tablespoon of cilantro or parsley, or a combination of two
  5. 1 teaspoon of lemon juice
  6. 1 teaspoon of minced garlic 
  7. Pinch of hot sauce or 1/4-1/2 teaspoon of red pepper flakes (optional)
Paleo Ranch Dressing:
  1. 1/2 cup of mayonnaise
  2. 1/2 cup of coconut milk full fat
  3. 1 teaspoon of minced fresh dill (can be dried, adjust the taste and quantity)
  4. 1 teaspoon of onion powder
  5. 1 teaspoon of garlic powder
  6. Dash of ground pepper
  7. 1/4 teaspoon of salt
  8. 1/2 teaspoon of dried parsley
Paleo Rose Sauce for seafood:
  1. 3/4 cup mayonnaise
  2. 1/4 homemade Paleo Ketchup
  3. 1 tablespoon of lemon juice, or orange juice
  4. 1/4 teaspoon of lemon zest
  5. 1 tablespoon of brandy
  6. 1/4 teaspoon of salt (adjust to taste)
  7. Dash of ground black pepper
  8. Dash of cayenne pepper, 3-4 drops of chili sauce, or Tabasco (leave it out if you don´t want it).
Paleo Pickled-Cucumber Sauce:
  1. 1 cup of mayonnaise
  2. 1/4 chopped pickled salty cucumbers, not sweet
Paleo Olive-Sauce:
  1. 1 cup of mayonnaise
  2. 1/4 cup of green olives chopped (change for other kinds if you like it)
Tartar Sauce:
  1. 1 cup of mayonnaise
  2. 2 teaspoons of Paleo Substitute of Worcestershire Sauce
  3. 1 tablespoon of sweet relish
  4. 1/2 tablespoon of fresh parsley minced
  5. 1 tablespoon of onion minced
  6. 1 tablespoon of olives chopped
Honey-Mustard Dressing:
  1. 1/2 cup of mayonnaise
  2. 1/4 cup honey (add more as desired)
  3. 1/4 cup plus a tablespoon of Dijon mustard or yellow
  4. 1/4 teaspoon of black pepper
Raising Cane´s Dressing:
  1. 1 cup of mayonnaise
  2. 1 1/2 tablespoons of Paleo Substitute of Worcestershire Sauce 
  3. 1/2 cup of Paleo Ketchup 
  4. 1 teaspoon black pepper
  5. 1 teaspoon of garlic powder
  6. 1/4 teaspoon of salt
Remoulade Sauce:
  1. 1 1/4 cups of mayonnaise
  2. 1/4 cup Creole mustard (4 tablespoons of  Dijon mustard, 1/4 teaspoon of Paleo Substitute of Worcestershire Sauce, and a splash of hot sauce)
  3. 2 teaspoons of horseradish (finely minced or prepared )
  4. 1 teaspoon of hot sauce
  5. 1 teaspoon of paprika
  6. 1 large garlic clove finely chopped
  7. 1 teaspoon of  fresh lemon juice, vinegar, or pickle juice
  8. Pinch of dill fresh or dried
Mock Hollandaise Sauce:
  1. 1/2 cup of mayonnaise
  2. 1/2 cup of plain yogurt
  3. 1 tablespoon of fresh dill finely minced
  4. 1 1/2 tablespoons of Dijon mustard
  5. 2 tablespoons of fresh lemon juice
  6. 1/4 teaspoon of salt
Sriracha Sauce:
  1. 1 cup of mayonnaise
  2. 3 tablespoons of sriracha sauce (adjust)
  3. 2 tablespoons of fresh lemon juice
  4. 1/4 teaspoon of salt
  5. 1 large garlic finely minced or grated
Fresh Garden Sauce: 
  1. 1 cup of mayonnaise
  2. 1/2 cup cucumbers finely chopped
  3. 2 tablespoons of onion minced
  4. 1/2 cup ripe tomato chopped
  5. 1/2 cup of sweet pepper chopped  (red, yellow, or orange)
  6. 1 tablespoon of chives chopped
  7. 1-2 tablespoons of Paleo Substitute of Worcestershire Sauce
Blue-Cheese Sauce:
  1. 2/3 cup of mayonnaise
  2. 4 oz blue cheese crumbled
  3. 1/2 cup of plain yogurt
  4. 1 teaspoon of honey
  5. 1 tablespoon of vinegar (white wine vinegar or apple cider vinegar)
  6. 1 tablespoon of minced chives
  7. 1/2 teaspoon of minced garlic
  8. Splash of hot sauce
  9. 1/4 teaspoon of black pepper
Chiplote Sauce Recipe:
  1. 1/2 cup of mayonnaise
  2. 1/4 plain yogurt
  3. 1 teaspoon smoked paprika
  4. 1/2 teaspoon chili powder
  5. 1/4 teaspoon of chipotle powder (adjust)
  6. 1 tablespoon of fresh lime juice (adjust)
  7. 1/4 teaspoon of black pepper
  8. 1/4 teaspoon of  dried oregano
Cilantro Sauce:
  1. 1/2 cup of mayonnaise
  2. 1/2 cup of plain yogurt (can be adjusted, less mayonnaise and more yogurt)
  3. 1 tablespoonful of fresh lemon juice 
  4. 1 tablespoon of apple cider vinegar
  5. 2 cups of cilantro leaves, stem removed, about a bunch 
  6. processor)
  7. 2 jalapeños, seeds removed
  8. 1/2 teaspoon of salt (adjust)
  9. 2-3 garlic cloves

Instructions:

In a bowl, mix all the ingredients until well combined. Some recipes require a blender or a food processor to blend and incorporate the veggies.

Put it into a jar with a lid.

Take it into the fridge to develop flavors.

Use it with a clean plastic or silicone spoon or knife.

Store in the fridge for up to one week.

NotesIf there is an ingredient that you can´t tolerate or don´t like, try to change it, and add anything that you want or that makes you feel well.

Coconut sugar can be substituted by another sweetener that suits your diet.

You can use any type of yogurt, but keep in mind that would change the taste result.

Adding organic ingredients when it´s possible to help us stay away from pesticides, herbicides, chemical fertilizers, and GMOs keeps us healthy delaying the aging process and regulating the functions of our bodies.
