love the traditional Almonds Nougat, which we called Turrón de Jijona because comes from the Jijona, Valencia, Spain,t in my house, brought by the Spanish people. I had the luck to eat the best ones because my dad was gifted when he worked with them there.

I can buy it because some pages sell them, but I really wanted to make one type of them, and then, I will do other, till I am going to cover my desire for all of them.

It´s a good choice, rapid to make, is gluten-free, paleo-friendly, with good fiber, proteins, and oil to nurture the body.

You can use it as a dessert or a snack.

Said that I am going to show you, how easy it is.

I have 2 recipes to share with you, one is with the ground toasted almonds, the other is with almond flour, I think the first one is the best, but the second one is faster because the almond is already ground, but you have to add some flavor, it lacks it, but if you are in a hurry, this last recipe can help. 😇 

So let´s make it!.

Ingredients of the First Recipe
  1. 2 1/2 cups of toasted almonds                                                
  2. 1 egg white (room temperature)
  3. 4 tablespoons of honey or maple syrup. (1/4 cup)
  4. 1/4 teaspoon of grated lemon zest (optional)
  5. 1 teaspoon of avocado oil or ghee for greasing the mold
  6. Dash of salt.

Set the temperature at low heat. In a saucepan, put the honey and lemon zest, stirring frequently to does not stick.

Meanwhile, throw the egg white in a bowl, mix it up, until the point of snow comes. Keep aside.

When the honey starts to boil, add a beaten egg white a little by little, fold it to incorporate.    By doing this you don´t lose volume.

Ground the almonds in a food processor and stir in the mixture until becomes a soft cream.

Cover the mold with enough parchment paper, greasing the bottom and up to edges.

Put the mix there.

Whit your hands press well, put more paper on, also you can add weight to it.

Let it rest in your fridge for at least 6 hours.

First Recipe

Ingredients for the Second Recipe:
  1. 3 cups of almond flour
  2. 8 tablespoons of honey or maple syrup. (1/2 cup)
  3. 1/2 teaspoon of lemon zest (optional)
  4. 1 teaspoon of almond  syrup
  5. Dash of salt.
  6. 1 tablespoon of avocado oil or ghee

Toss the almond flour in a pan, spread it, and toast it at 325 F for about 10 minutes stirring 1 or 2 times until it is lightly brown, let it cool, and transfer it to a large bowl.

Warm the honey in a double boiler and lemon zest. 

Add the honey to the other ingredients. With your hands knead the dough until you have a thick consistency but all is well incorporated, and the almond flour starts to release its own grease.

Taste and rectify, and if you want sweeter, add more honey, cinnamon, vanilla, etc.

Follow the same last 4 steps of the first recipe.


The recipe makes 8-10 slices.
Time of Preparation: 10-20 min
Total Time: 20 min.

Notes: To stay moist, you should let the nougat be wrapped in parchment paper.                                   If you want it taller, put it in a small container.

The recipe is updated on 6/11/2021 to give it a better taste than the second recipe said before.
