This recipe is absolutely amazing, I was wondering how turned out, but the result was incredibly moist and very tasteful. The key to the kitchen is to try different savors and how they best combine. I am neither a chef, nor a genius, and sometimes, need to see some recipes to develop one, then I do it with my unique touch. This about feels and combines one of the best pleasures of life. My grandma always said to me that love enters through the kitchen, 😁and I think she is right, it is the most sublime way of communication, the way to please others, and thanks, get everyone together at the same table, its smell and taste achieves an incredible love and camaraderie although the diners do not know each other, they will begin to smile and among them, there will be peace and I think that it is art, music, and harmony through the taste buds, are you with me?
The recipe has healthy ingredients: veggies, nuts, avocado, a lot of onions and garlic, parsley, cilantro, lemon, spinach, grad-fed butter, juice of sour orange, dry and white wine, and spices. to nourish, provides healthy fats, vitamins. minerals, fiber, and good carbs. It`s a combination of living on a plate.

Ingredients:
The day before, prepare your pork loin.
When is dry, open it completely in the middle of the side as if it were a book with a knife.
Mix the spices with sour orange juice and white wine, pour over the intern part of the loin, rubbing them with your hands, then outside.
Close the open parts together, and put them inside a glass container with a lid or ziplock bag in your fridge.
When you are ready to cook it. Tawed it at room temperature, about 30-45 minutes before.
Pre-heat oven to 375 F.
Meanwhile, prepare the stuff. Put 1 tablespoon of avocado oil in a skillet, throw the sliced onions, a pinch of salt and black pepper, at medium temperature, when they are translucid, put the chopped garlic until fragrant.
Mash the avocado, and put over, stir.
Chop the nuts, and toss inside the mix, stir, and rectify the savor, it needs more salt or black pepper, you can add now. Set aside to cool.
Open the loin, spread over the spinach, accommodating them to cover it completely, then put over the mixture and spread evenly.
Starting to roll by the edges with your hands. You can tie it with a kitchen cord, or put long kitchen sticks through the meat so it does not get loose.
On a roasting pan, put pieces of the butter, toss the loin over.
Mix the dijon mustard with the other tablespoon of avocado oil.
Rub the roll-up, edges, and sides.
Bake and roast for about 45 minutes, depends on your oven, or until the thermometer reaches 145 F.
Let it rest, between 10-20 minutes. Put the juice of the lemon over.
Serve with its roasted juices.
Enjoy with a salad or anything else you like. I have my salad inside the sliced loin, even my carbohydrates, so I grabbed a cup of red wine, ha, ha. I enjoy to much take a piece of meat, then a sip of wine, uhh!. 😋

- 1 kilogram of pork loin thawed and dry with a paper towel
- 1 tablespoon of oregano
- 1 teaspoon of cumin
- 1/2 tablespoon of salt
- 1 teaspoon of ground black pepper
- 1 teaspoon of paprika (optional)
- 1/4-1/2 teaspoon of cayenne pepper (optional)
- 1/4 cup chopped fresh parsley or 2 dry tablespoons
- 2 tablespoons chopped fresh cilantro or 1 tablespoon
- 1 sliced medium onion
- 4-5 chopped fresh garlic or 1 ground tablespoon
- 1/4 cup of sour orange
- 1/4 cup dry white wine
- 3 tablespoons of grad-feed butter
- 1 fresh avocado
- 1 1/2 cups chopped mixed nuts (or what you like most)
- (I put pistachios, pecan, cashew, walnuts, and pumpkin seeds)
- 2 cups of spinach
- 2 lemon juice
- 2 tablespoon of avocado oil, separated, one for greasing the skillet, the other one mixed with the dijon mustard
- 2 tablespoons of dijon mustard
