Sweet potatoes are very versatile and savory, the recipes are endless.

When I made my previous post of  Wrapped Shrimps in Bacon, I just wondered how to do a new recipe using them. I made my variations, maybe you saw that they were in the picture.

In my country, is very common stuffed potatoes, I wanted to change the recipe for the sweet potatoes. While I was making the shrimps, I reserved some apart to make these bombs.

Make the quantity that you want, larger or small, keeping them in the refrigerator until you are going to cook them, or you could fry them all, then, warm the quantity desired in the microwave. They can be stuffed with any meat you like, any cheese but preferably one that melts easily, vegetables, etc.

This is a healthy option, is gluten-free, and paleo-friendly because, I changed the flour or bread crumbs for sesame seeds that are very healthy, palatable, and make a rich and crunchy crust with the savory sesame seeds, yummy!

These bombs can be used for breakfast, as an appetizer, lunch accompanied by meat or fresh vegetables, or for a party. If you are planning to gather people in your house to see the Super Ball, they will be a good choice also.

They are very rich just made, but they can be eaten at room temperature.

I will explain here, how easy and tasty they are.

Preparation Time: 15-20 min 
Cooking Time: 10-15 min (depends on the size of them)
Time for frying: 10-15 min
Total Time:45 min
The recipe makes around 12 bombs



INGREDIENTS                                                                           
  1. 2 pounds of sweet potatoes chopped
  2. 3-4 tablespoons of butter
  3. 1/4 cup of cream of milk of your choice (coconut cream, almond cream, or heave whipped cream)
  4. Salt to taste
  5. Black pepper to taste
  6. 1 beaten egg
  7. 1/3-1/2 cup of sesame seeds
  8. 1/3 cup shredded  vegan cheese or dairy (optional)
  9. 10-12 cooked shrimps cut into small pieces
  10. 1c up virgin coconut oil for frying

DIRECTIONS

Put the sweet potatoes in a pot with enough water and salt to boil.

When they are cooked but firm, drain them very well.

Mash them with butter and cream, rectify the salt and add black pepper.

Cold it in your refrigerator for 1-2 hours.

Take out the bowl. With the help of a tablespoon make a shell in the palm of your hand.

Add portions of the cut shrimps and cheese into it, then close the edges of the shell.

Set aside until you are done.

Put the balls n your refrigerator for around 1 hour, or more time.

Get them out. Pass them by on the beaten egg. 

Wrap them one by one on another plate with the sesame seeds, pressing a little, so that the seeds stick on the surface.

Fry them in batches. I suggest putting enough coconut oil to exceed them, just like that, you don´t have to turn them.
