Black Beans Salad with Avocado and Mango.

The black beans are part of the legumes and they are plants with seeds in pods.

Black Beans are healthy, they provide fiber, proteins, carbohydrates, calories, essential vitamins:  vitamin B1, B6, pantothenic acid, riboflavin, thiamin, niacin, and vitamin A, minerals:  folate, phosphorus, copper, magnesium, calcium, iron, manganese, selenium, sodium, zinc, omega 3 and 6.

In general, they are an abundant source of fibers to help digestive health, proteins, rich in antioxidants to protect us from cancer, boost cardiovascular health, keep the blood sugar levels, help weight loss, and give us energy.

The recipe is easy to make and very savory, is very healthy and you can replace your meal or uses it as a side dish for fish, chicken, turkey, or ham, or you could mix them up also, and use it as Burrito with a healthy tortilla.

BLACK BEANS SALAD WITH AVOCADO AND MANGO

The recipe makes 3-4 servings.


Ingredients                                                                                       
  1.  1/2 pound black beans sprouted cooked by yourself.   
  2. 1/2  big onion or 1 medium chopped
  3. 1 sweet bell pepper red, orange, or yellow 
  4. salt to taste
  5. dash of black pepper 
  6. 1/4 cup of olive oil
  7. 1/4 cup of fresh cilantro or parsley, or the half of each of them
  8. 1 big mango or 2 smalls
  9. 1 or 2 avocados (depends on the size)
  10. 1 or 2 limes or lemon
  11. 1/4-1/2 of cayenne pepper, chili powder, or other hot sauce (optional)
  12. 2 tablespoonful of chives chopped

Directions

Put the beans in a pot with abundant water all night,

Drain and wash them, then cook about 40-45 minutes, they will be soft but firm, put them in a bowl.

Star to integrate the onion olive oil and lemon juice, with the black beans.

Chop the onion, fresh cilantro or parsley, sweet bell pepper red, and chives.

Slice and chop the avocados and mango, throw them in a bowl, be careful don´t break them.

Stir all, and put cilantro or parsley, chives, and bell pepper, adjust the taste with salt, black pepper, and cayenne pepper. Enjoy!.
